    Potato skins are only toxic if the skin is green from exposure to the sunlight, which contain the alkaloid solanine. Raw potato skins can sometimes cause digestive problems for chickens. Cooked skins are the best for them but so long as they are not green, you can give in moderation!

    Everyone will always have an opinion or something to say. Audacity is on sale this year it seems!     Love your videos Laura. I hear you about onions! Me too! I chopped and carmelized 18 lbs in a roaster oven overnight on my patio and then canned them in pint/half pint jars to make meals easier and have a bunch to my adult kids. I can’t make a meal without ONIONS as a base! 😂

    Mexican subcriber here! When I make enchiladas, I first slightly fry them in hot oil and then put them in the sauce, this way they are nice and soft when I fold them up. However, if you want to skip the oil, warming them up on a skillet or microwave should also work.

    I agree about hand washing dishes is faster then a dishwasher. We do not have a dishwasher, I wash all our dishes by hand 4 to 5 times a day (and I'm ok with that)

    When you go to the grocery store tomatoes, potatoes, onions, cucumbers, bananas, oranges and apples for example are on display in centre displays. These indicate that they are better kept out of the fridge. Back i n the 50's jam, butter, ketchu p, mustard were kept in a cupboard along with the tin of condensed milk used as coffee creamer.

    I use to put tomatoes in the fridge, but several years ago someone told me they last longer if you leave them out at room temperature and I haven’t put them in the fridge since. I find they last twice as long; I will say, I generally get garden fresh tomatoes from my mom’s farm, but the ones from the grocery store last longer too.

    I have found that tomatoes get soft and "mealy" if I put them in the fridge. I don't know if they last longer on the counter, but I think they taste better. 😊

    I agree with @28littlegaint. I am not Mexican but I do love their cuisine and having been raised in Salinas, Ca., I do cook a bit of Mexican food myself. If you heat a skillet with some oil/lard, you can dip your corn tortillas one at a time for a few seconds to make them soft and pliable. Your enchiladas will roll up much easier without tears. (Suggestion: use a large sheet pan to stack your softened torts on one end then when you have those done, use the other side of the pan to roll your enchiladas. It will contain the greasy mess and make cleanup easier.)
    Now, I can’t advise on the potato skins and chickens since I don’t have chickens. But I have eaten potato skins and I did not die😬. As far as your onion chopping goes, I didn’t know there was a wrong way to dice them. But I did like the way you chopped your’s. And I also am a “clean as you go” kinda cook. Makes cleaning much easier… and I too wash by hand. It is much quicker and for me, easier.
    I enjoyed your video and watching you cook. And at age 70, I learned a few things. Thanks for sharing!

    Hispanic wife here 😉, If you warm up your corn tortillas on the stove they will be flexible and not break. I love how you are flexible and just pivot to make the meal work 👏🏻.

      Question, do you ever just chop up a bunch of onion at once and freeze it? That’s my go-to solution so that I don’t have to chop and cry every day 😝😂.

    Your tortillas broke because traditionally, you drop them in a hot pan of oil. Just to cover for a few seconds on each side so they are still soft.. then place on paper towel to drain. You can’t imagine how the taste and texture changes. YES! I use tons of onion! Who wouldn’t?

    Never had a problem feeding my chickens potato peelings. Chickens are very smart, if something isn't good for them, they will leave it!

    I leave home grown tomatoes on the counter. If I cut them up and have some left, those I refrigerate.

    I don’t use the dishwasher either! People think I’m crazy. I’ve never liked it, even as a teen when my chore was doing dishes.

      Growing up my Mother did not have dishwasher. Once I left home, they did a huge kitchen remodel and put one in. As an adult, I never had one until after the birth of my third child. My husband's Grandmother bought it for us. I still prefer to this day to do dishes by hand and I am now living in my 5th home.

      I always use my dishwasher, including stainless steel pots and pans. If I own it and it doesn’t fit in my dishwasher, I don’t own it anymore! I forgot about the dishes last night and filled the dishwasher in less than 5 minutes. It was heading for 1am, so I wanted to go to bed. Done. 💙

    For using stew meat you could try things like stews from around the world. Every country has their own versions with amazing spices and flavours.
    Cook up the meat until it’s tender and use it for puller meat recipes , taquitos , tacos etc… if it’s tender enough it can be used for anything.

    Hi! Love love all your videos! Not sure if you’ve heard of this enchilada tip…so your tortillas won’t break, you can put them in the microwave for a few seconds. You can put 7 at a time. After that, you pass the tortillas in oil for about 2 seconds on each side. When your all done, then you can stuff them and roll them up. They won’t break!

    Onions!!! Yes! I go through so many onion, garlic, peppers, and celery. Every meal I make starts with 2 or three of these. Love your videos.

    Our family uses onion in everything 😊 I chop a good amount in my chopper . It is less work and time consuming. Since we use it daily there is no worry that the onions will go bad 😊😊

    I’m an onion hater, my mom used to eat onions like apples 😱 my mom cooked with so many onions it was hard for me because I had to separate my food before my mom put onions I loved my moms food just without onions! Everyone told me when I got older that my taste buds would change and I would like them well I’m 35 and still waiting lol 😂 then they said when I get pregnant maybe I would like them we shall see no kids yet! Great video!!! Very wholesome ❤

    I love onions and garlic my self .... I remember dating my husband now we went to a buffet and I was picking out onions from entrees. It was soo good . I don't quite understand people who don't like onions and garlic

    Hi Laura I use onions on everything too lol so I researched the potatoe skins they say they are toxic to chickens but sweet potatoes are not . I never knew this either 🤦🏼‍♀️

    So i googled your question on giving your chickens potato skins and it sayed yes you can give your chickens the skins as long as they are cooked raw skins can upset there belly's.
    Also what I do with my fruits and vegies for storage is I think about the produce department at the store and whete they put things like lettues, carrots, peppers ect.. is in the cooler so i put mine in the refrigerator, onions, potatoes, garlic, tomatoes, snd appels are are on a shelf at room tempiture so thats how i store them.

    My husband uses stew meat and our homemade chicken broth to make chili colorado from scratch. It's kind of a lot of work but the sauce is beautiful and it tastes delicious served over rice with a flour tortilla and refried beans.

    If you don’t want the shrimp overcooked and chewy you can also just put them on the nachos after they come out of the oven

    I also heard another UA-cam say she leaves tomatoes on the vines rather than harvesting ever day and waiting till you have enough to cab them. She said the stay the freshest and don’t seem to rot. I guess that only works if you have your own vines . If you are given tomatoes I’m not sure if In the refrigerator or out is best.

    We make enchiladas all the time!! so we take the corn tortillas and heat them in a little bit of oil and then we add the filling and roll it. Then we pour all of the sauce on. It helps keep them from ripping and getting too soggy so that they will hold together.❤

    I give my chickens potato peels. I’ve noticed that if something is toxic my chickens just don’t eat it and then it just turn to compost. I think the main concern is green on potatoes being toxic. But like I said, my chickens just don’t eat what’s not good for them.

    SLOPPY JOE'S are a favorite of ours too. I made up this recipe for it . . . I put lots of chopped onion (lol) in with the hamburger when I brown it, I drain off the water from the meat after it is cooked, I add lots of ketchup (more than you did) and then this unusual ingredient, PICKLED JALAPENO PEPPERS chopped small and a lot of the vinegar from the jalapeno jar. I heat it a few more minutes to combine the flavors and serve it on hamburger buns topped with american cheese. You would be surprised that the jalapeno peppers are not too spicy hot for children. Heating them makes them mild. The onion adds sweetness and the jalapeno peppers add a sour/sharp taste like your mustard does. I hope you will try it! --Sheila McDade in Chattanooga, TN

    I asked my friend "Google" about chickens eating potato peels and they said it's ok IF the skins are cooked, otherwise raw potato skin causes stomach upset/digestive issues for the chickens. Also not to feed them skins with a green color to them. Regarding tomatoes ...they taste better when kept out of the refrigerator. Once refrigerated they become mealy and lose their flavor. All your dinners looked delicious! Take care!!

    I make that same enchilada sauce totally. It’s the best recipe so much better than canned. I also make it into a casserole/ lasagna style. I don’t think I’d have the patience to roll all those up.😊

    I do a mix of dishwasher and handwash for dishes: silverware, glasses and plates in the dishwasher and pots and pans by hand.

    Keep tomatoes out of the fridge. I put mine in a cooler place out of direct light , but tomatoes are always ready to use before I am. We are drowning in tomatoes this year from the garden . They are everywhere in my kitchen and on a shelf unit in the hall. I peel, dice and freeze a lot so I don’t have to buy them at the store. I make my own tomato sauce to use all winter. I have 15 two gallon freezer bags of tomatoes in my smaller freezer. This ways I can make a limited amount of sauce at a time all winter. I core them before I freeze them . I take several bags out at a time to make sauce. I put these in my food processor and strain into a large bowl and put this in slow cooker to cook into sauce and when done to thickness I like I put in freezer containers and freeze till I am ready to use. You can season any way you want while in the crockpot.

    My mum used to keep fowl and she always gave them potato peelings but she boiled them first and mixed them with something else, I think it was layers mash and they were ok, well ok until Christmas that is!

    We all use onions. I like the way you cut them. I watch several vlogs here on utube. All, or almost all cut onions that way. I might start to as well, because it seems faster and nore efficient. Yay onions. LOL 😂

    I keep my tomatoes in the fridge in Tupperware containers and they last forever but if I leave on the bench they get so soft, maybe cause I in Australia and it’s warmer

    If you refrigerate tomatoes, they lose some of their vibrant flavor. Leave them out...But if they start to get overripe, then you should refrigerate them or can them at that point.

    I love onions they go with everything! I don't put my tomatoes in the refrigerator. I know my homegrown lasted a good amount of time, then again I loved them so was on a bit kick. My cherry tomatoes also last and even some Aldi Romas last on the counter. If I only use half a tomato, I know why half 🙂 I only cook for my self, I will put the other half in the ref. and use it the next day. I also love tomatoes and had 2 volunteer cherry tomatoes plants this year! The season is winding down but I still pick some each wk.

    Enchiladas are made using fresh corn (masa) tortillas. Buy them or make them the day you make the enchiladas and they will be moist. Some people lightly fry them before putting them into the pan. My Grandmother used good old fashion lard (not plant based) to do that. Also ususually cumin, ancho chili powder, garlic powder, salt, and pepper for seasoning the sauce. Still, your enchiladas looked good. Onions are good for you! I grow lots of onions. Sending blessings and love ❤️🙏🏼

    Tomatoes have a chemical change take place once refrigerated. I won’t eat a tomato that’s been refrigerated bc it looses so much flavor. I don’t know chicken and potatoes🤣but I know my maters!

    Potatoes are on the nightshade family and parts of the potatoes, like the vines can be toxic. Just like tomatoes. Don't give chickens the leaves and greens. Potato peels are OK, just not the ones that have turned green. If you want you know about a food that you feed your chickens, just check Google, 'can chickens eat . . .' and you can find out. I used to do this with a friend that had chickens and I didn't want to send scraps that were harmful to the chickens.

    I love to watch your down to earth cooking. I’m going to try that shrimp nachos. Looks yummy. It’s great your family loves seafood. It’s funny but I have to tell on myself. When mine were little I told them all they wouldn’t like shrimp “it’s awful”. Well that didn’t work. I gave it my best.

    Potatoes are in the nightshade family. Some variety are more toxic then others and some are fine.

    Almost every recipe I make begins with a fat and onion. I even eat raw onion sandwiches with mayonnaise.❤

    I've heard potato peels have Solange with is a toxin for chickens. And it is advised to boil the skins for a bit. But I never did...just fed them the skins and never seemed to hurt them😂

      I feed raw potato peel to my worms in worm farm. Its not their favourite(, but they havent complained of belly ache yet😊

    We don’t have chicken but my chicken lady says not potato skins for chickens. We leave our tomatoes on the counter unless they were refrigerated prior. Tastes better

    My oldest daughter has an onion allergy amd ever since i had her they can give me stomach problems so.... I do onions for my husband and other 2 children but none for my daughter and i just play whether i eat it by ear.
    Sloppy joes are my "lazy night" go to. 😂 Its fast, easy, feeds us all well enough that i dont need a side and i often add extra veggies that are close to their end.

    I've watched a bunch of you and your sister's videos. I think you find your style of cooking in Romania region. I am pretty sure if you would try some of the more traditional foods from Romania, you will love it. Especially because they make a lot of soup and cook with lard. Just tell me if you are interested in some of those recipes. Some of them are actually very delicious. I can send you a recipe for something we call "racitura" (loosely translated will be coldness...kinda) It's one of my favourite things in the world. it's made out of pork legs., the part with the hooves, but you can definitely use some other bony part of the animal. I made it with chicken wings for example. It was still very delicious. uuuu... forgot about potatoes with sausages... that is delicious as well.

    Raw potato peelings can give the chickens digestive upset. I don't feed them to my chickens so I can't say if I noticed that or not. You can google the tomato thing but I'm pretty sure when you stick fresh tomatoes in the fridge it changes the texture (taste might be the same)? I think America's test kitchen did an article about it. I leave mine on the counter. There are lots of mexican style beef stew recipes on line and since your family likes those flavors that might be another stew beef option for you.

    Great meals/recipes ,too much beef for our diets. Red meat once or twice a month in our home. We rotate chicken, ground and unground, turkey, pork, seafood/fish, pasta or a meatless meals. I question the quantity you prepare, looks small for your family size. Wondering if you triple for your family. Kudos to you for the hot fancy lunches! I try to have something hot like a soup or mac and cheese each lunch bc it is more satisfying. The shrimp nachos is a great idea for lunch time. Just love this channel. Wish we get a sneak peak at the children. If you have a bumper crop of eggs scramble (no water or milk) with parm cheese and pepper add to cooked al dente pasta and bake. Great easy lunch . I cut in squares and serve with a salad or veggy sticks (celery, carrot, zucchini, uncooked green beans and dip).
