I've just made the marmalade, after my first test I brought it back to the boil but it started to burn before I noticed, just caught it in time before it was ruined. I think the rind had sunk to the bottom of the pan before it was brought back to a rolling boil. Don't know if I could have stirred before bringing to the boil?
