When cutting your prints with the knife, you should score first and then cut over it again. It looks like the canvas tough material. If this is the case, you should not try to make the cut with one pass. I hope this helps. Love your work.

I would look up matte cutting tools that frame people use. Matte cutting is really tedious and one fk up ruins expensive matte board. Blades have to be sharp and replaced often. the tools are pretty simple and accurate.
The large format guillotine cutters should be able cut them no problem, when I was in school I used to use them on cold pressed boards and illustration boards (the thick boy ones) all the time and they cut them with out an issue.
I think the woven properties of the canvas material makes it hard to cut. Unfortunately I've tried and failed because it doesn't cut through all the fibers 😩
