You nailed it! I used to work at McDonald's in my teens & the Mac Sauce had a very distinctive flavor as well as odor...the individual McDonald's locations did not make their own sauce but brought it in premade from the corporation. At some point in the '90s there was some slight change to the ingredients and it never tasted the same to me...close, but not the same. When I made my own at home recently using the recipe you shared I instantly could smell & taste that this was the original Mac sauce that I was used to as a teen working there.
Thanks! I appreciate you taking the time to leave feedback. It's amusing to check out other videos on UA-cam where they say to use ketchup, French dressing or some other exotic ingredient. Then they claim it tastes exactly like McDonald's. Mike 🧔 👍
@@KitchenTipsOnline That sort of thing used to puzzle me until I considered that some people cannot tell the difference between one brand of mayo & another, Coke vs Pepsi or distinguish between a $3 frozen pizza and a fresh hand-tossed one from a pizzeria. Once you consider those things it suddenly makes sense. I actually had someone tell me once that Best Foods Mayo & Miracle Whip tasted exactly the same. 🤷
Well it's simply not true what the so-called " inside source" is saying. Think about the cost factor for a second. If McDonald's used something like Hollandaise sauce sourced outside of the manufacturing facility where Big Mac sauce is made, the cost of the final product would soar. And that's simply not practical, Mike
@@pdxtom The thing I've noticed is that Miracle Whip tastes nothing like it did when I was a kid going back some 40 or 50 years ago now, but then neither does the old Dannon yogurt nor pork sausages. Maybe my taste buds have aged for the worse, but Miracle Whip used to have some red sparkles of some sort if I'm not mistaken.
Shoutout from norway! I just made this without measuring. Just from tasting. I had to add finely chopped pickles and abit of sugar instead of sweet relish. I altso added 1/4 of an white onion and graded it til it basically turned into mush or what you might call it. Tasted amazing!

Thank you for tuning into my video from Latvia, 5,000 mi away! You don't need to buy a blender if you can find sweet pickles on the shelf at the grocery store you can simply chop them up with a knife. Keep in mind that the sweet pickle is one of the most important parts of the recipe. Mike
Thanks for the recipe. Another even easier way to measure sticky/goopy stuff like mayo (or pretty much anything else for that matter) is to weigh it directly into the bowl you're mixing it. Save you having to clean a measuring cup and fuss with cooking spray or silicone spatulas. You can get the conversion by looking at the nutrition label and doing some basic math. For Hellmann's mayo, the serving size on the label is 1 tbsp or 13g, and there are 8 tbsp in 1/2 cup, so you would weigh out 104 g directly into the bowl you're mixing the sauce in. Kitchen scales are cheap - you can get them for as little as $8. This doesn't work great with a typical kitchen scale for very small quantities, because they're not that sensitive to small differences (5-10g). But you could get another scale that is calibrated for the smaller amounts (like a digital pocket scale, which are also cheap), or just use teaspoons/tablespoons for the small amounts like the spices.
Thank you kindly! These measurements are just about spot on. For my personal taste I subbed about a teaspoon of sweet pickle juice and an extra half tea spoon of vinegar. Cuts the "mayonnaisey" flavor a bit for more tang.

If you don't have cooking spray handy (or even if you do), consider simply wetting your measuring cup with water before putting the mayonnaise in it. (This works on measuring spoons, too, of course.) Thanks for the kind words. Since the recipe is a mayonnaise-based recipe, I imagine it will last as long as mayonnaise. I have had mine in the refrigerator for 2 weeks. That's as long as it lasts when the kids are around... Mike 🧔
I worked at the restaurant in the mid-90's and can confirm the sauce used for the Big Mac was Thousand Island Dressing at that time. The sauce came in large tubes packed in boxes labeled with the McDonald's name and logo and had the words "Thousand Island Dressing" printed on it. They did not say "Big Mac Sauce". I unloaded hundreds of these boxes off of trucks during my time there. The sauce for the other burgers was a ratio of about 1 part mustard to 8 parts ketchup, rehydrated onion and dill pickle. The Filet'o'Fish was a standard tartar sauce and the McChicken sandwich was mayonnaise. None of the breakfast menu items were sauced. I have recreated all of these sandwiches at home perfectly in the years since. These are the accurate 90's McDonald's sauce formulations.
The recipe demonstrated in the video is what is currently used at McDonald's. It's the exact recipe you will see in the video from a McDonald's executive chef. Here is the link, Mike ua-cam.com/video/c4QOHBuloG8/v-deo.htmlsi=YnJlBOmnxru3Z1rU

@@KitchenTipsOnline Okay I went and tasted the recipe again and I feel like the taste of the onion powder is what's making it taste off. You don't get that dried onion powder taste in bigmac sauce i'm 1000% sure of that. @@marvin59vongeest79Half a cup translates to approx. 125 grams. For my version of this, I use 120g mayo and a finely chopped gherkin as here in the UK I can't easily get the sweet relish. I've made this several times and it's delicious but I think I should perhaps be adding half a teaspoon of sugar which I've not tried yet. Burgers for Tea tonight so I'll try adding the sugar.

Because I've never had a Big Mac I've never had the Mac sauce, but I know people who love it and order extra. I'm going to make it and put it on my vegan burger. Thanks for the recipe. I'm looking forward to trying it to see why people love it.
I have made this a dozen times or so form the original McDonalds Chef video, it is spot on! I use low-fat mayo can't tell the difference. One thing i would say is let is set for at least 30 minutes to come together, you can keep the extra for weeks in the fridge. Also you don't need to make the double patty, triple bun. You can put this on a single burger with , cheese, shredded lettuce, diced onion and pickles and you get the same taste. But my favorite is the Big Mac taco's. smash ground meant onto a street taco sized flour tortilla, S&P cook meat side down first, turn it over and cook until done, put on the same toppings on and eat it like tacos, my son loves them and low carb!
Thank you for sharing your experience and tips! Using low-fat mayo is a great idea for a healthier option, and it's good to know it doesn't compromise the taste. Letting the sauce set for at least 30 minutes is excellent advice to enhance the flavors. Your single burger suggestion and Big Mac tacos sound delicious and creative! I'll definitely have to try the taco version - it sounds like a fun twist that my viewers will love, especially those looking for low-carb options. Thanks again for the fantastic feedback and ideas! Mike 🧔

I don't know how much difference it made but I added turmeric because it's on the official ingredients list, comes out pretty much identical to what's on the burgers.

Love McDonald’s but in moderation of course.
G’day from the land down under! 🇦🇺 Absolutely, moderation is key when it comes to McDonald's. 🍔 In the video, I indicated that it is sometimes difficult to find sweet relish outside of the United States. 🌏 How about Australia? Can you find sweet relish in grocery stores in Australia? 🛒 Mike 🧔
This is a great recipe. I also love your Macdonald's tartare sauce recipe. Just out of curiosity, why do you sieve the sweet relish for the tartare and not the Big Mac Sauce?
Kind regards 🤔

Another recipe is exactly like this one but they used smoked Paprika... Does it matter whether we use smoked vs regular?
I don't think it's going to make any difference. There's enough other ingredients in the recipe that the difference between smoked and non-smoked paprika will be impossible to tell. When you make the recipe please come on back and let everyone know how your batch turned out, thanks Mike 🧔
@@KitchenTipsOnline Yesirrr!
@@KitchenTipsOnline Okay I went and tasted the recipe again and I feel like the taste of the onion powder is what's making it taste off. You don't get that dried onion powder taste in bigmac sauce i'm 1000% sure of that. I'm going to do some experimenting with this and use finely chopped onion instead of dried powder, and pickle juice (which has vinegar) instead of the regular white vinegar......

Sweet pickle Relish: 30g
American Mustard: 7.5g
White Vinegar: 7.5g
Paprika: 1g
Garlic Powder: 1g
Onion Powder: 1g

Hey Mike, how much is “half a cup” of mayonnaise?
I'm confused? Did you watch how I demonstrated in the video how to measure half a cup of mayonnaise? I honestly don't understand what you are asking, Mike
@@KitchenTipsOnline in Europe we don't mesure in cups but in gramms...

Have you tried seasoning the ground meat before turning them into patties? Garlic, onions, salt and pepper. Silly question, are you using beef?
One tip, let the sauce get to room temperature before using, it's never cold at the restaurant and the warmer sauce is a different experience.
Excellent tip! Thanks for sharing, Mike 🧔
I worked at McDonald's as a kid. It's cold when taken right out of the fridge and it goes fast so will only warm up to room temperature during dead periods.
