Balut sa puti is the perfect balut! Simply put it, the white part is wrapped around the whole duck egg inside, enveloping the yellow and tiny duck in the duck egg.
I think you should try Ilocos/Ilocos Sur/Ilocos Norte part of Luzon. A little more vegetable friendly dishes, just be careful with bitter food, us ilocanos have an acquired taste for bitter!

The banana rhum item is not cultural. But it must taste great. The Rendang is so Indonesian. But that cant be like the same taste with the Rendang in Bali.
That $0.18 pastil is already 1 breakfast meal for Filipinos and if you're not satisfied with it then get one or two more what is 18cents anyways and yes you're right there about the balot it's a protein bomb and it's really good in your specific time at 2 am after maybe a hectic editing or something it is like a go to snack aftrr you eat 1or more you'll feel. Like you go for another numerous round of working or anything if you know what i mean🎉 and with that fresh lumpia there it's more better if you ate it with peanut sauce or sweet and sour spicy garlic sauce and wow youre the first foreigner that i saw that ate the balot without hesitation, for the taho you should try the strawberry taho in Baguio man!!
I went to the Philippines in the 80's when Boracay was nothing but beach bungalows. When I was in Manila I went to the clubs and loved it. It sure beat shopping for merchandise. The Mamas-an makes sure you have a nice girl to sit with and it cracked me up that San Miquel was $.25 and a coca - cola was a dollar. i went out drinking with the girls at night and I think they laugh at us eating balut for the first time. I ate it, but it is grossI then I went down to Negros and went walking up the mountain and the locals said watch out for the Guerrilla's and I thought they meant the ape kind. There was no problem, just the sweet smell of wild coffee blossoms in the wind! There was an old hotel that had a hot springs pool, that you could adjust the temperature. What I loved about the Philippines is they are very fluent in English and Spanish. I liked the Tagalog language too. Beautiful country. One thing I don't like is so much deep fried food on the streets. People love it though. I'm not sure how healthy Palm oil is for you.
It's such an awful stereotype that filipino food is all fried and I blame Manila for it. Regular filipinos don't eat those as a daily meal. Most of us eat fish and vegetables and at most, chicken, esp in the provinces. Heck some even use stingrays as base (Ginataang pagi). Please try Kinilaw/Kilawin, Pininyahang manok, Ginataang Kalabasa with Malunggay, Gising Gising, Laing, Pakbet, and of course the Sinigang. There are so many kinds of non fried filipino food. Heck if you try going out of Manila there would be good Kinilaw in the neighboring cities especially in Marikina. PS: Ginisang anything is good, really. I hope you guys give other kinds of filipino foods a shot because it's so unfairly judged by people who only focuses on the damn fried foods.
