Proof Bread is a modern throwback to a way of life that values small-scale craftsmanship, local community, and creativity.
We are a team of passionate bakers working in a historic building in downtown Mesa that has been converted into a retail bakery.
Everything we bake is long-fermented with our sourdough starter ‘Harriet’. Each product is artisan, crafted by hand, from the best local ingredients, with no shortcuts.
We bake in line with 13,000 years of human history, avoiding artificial processes and unnecessary ingredients. Honoring tradition and serving better bread for our community.

I’ve loved watching the progression of Proof over the years.
This was a fun and interesting lesson in reducing waste.
Maybe it’s my OCD but if you move your soaking bucket between the lid/cutting-board and the sheet tray, you’ll reduce the amount of movement and twisting required along with eliminate the dripping into your storage container.

Love the no waste idea! I would have used a certain size scoop for the fillings so they are all uniform.
I too must agree with the other comments the guy on the phone should have taken his phone call outside or in another room. Also a finished picture of the second bake would have finished this video off nicely.

Nothing wrong with putting a little pride into your work.
There's a cake/scone in the UK called a Fat Rascal, its made from leftover/stale cake combined with candied fruit and fresh scone mixture. Bettys Tearoom in Harrogate are famous for them, they don't use leftover cake in theirs.

Interesting you say this. After this footage was shot I immediately noticed that the team member was holding the pastry in their hands while cutting rather than cutting horizontally on a table top. This technique needs correction.
As shown, there is an unnecessarily high risk of injury.

Please don't put up video's showing employees cutting *toward* their hands without cutting gloves on.
I have sliced my palm cutting a bagel with a serrated knife, even though I owned some cutting gloves. Not a fun experience.
I agree that cutting towards your hand is not ideal but cutting something as delicate as a croissant with cutting gloves seem unnecessarily difficult with no added safty plus they are notoriously unhygenic.
