    Ingredients:
    • 470g Ribeye Steak (1-1.5 inch thick)
    • 3 cloves Garlic, peeled
    • 2 Onions, quartered
    • 3 sprigs Thyme
    • 2 tbsp Butter
    • Salt & Pepper (I used @sapinkhimalayansalt)
    Procedure:
    1. Take the ribeye steak out of the fridge and let it rest for about 20 minutes to reach room temperature. If it’s frozen, make sure to thaw it overnight or the day before.
    2. Pat the steak dry using paper towels. This step ensures a better crust when searing.
    3. Season the steak generously with salt and pepper. I used SA Pink Himalayan Salt for its added minerals and flavor.
    4. Heat a heavy-bottomed pan over medium heat. Sear the steak, allowing a crust to form on one side (about 1-2 minutes), then flip to the other side. Cooking time varies depending on the thickness of your steak and the heat of your pan. Don’t forget to sear the sides as well by tilting the steak along the pan’s curvature.
    5. Once a nice crust has formed, set the steak aside to rest.
    6. In the same pan, add 2 tablespoons of butter, garlic cloves, and quartered onions. Cook on medium heat until they start to soften, then add the thyme.
    7. Return the steak to the pan and begin basting it with the melted butter and aromatics for about 1-2 minutes. Check the steak’s doneness by pressing on it-compare it to the firmness of your palm when touching different fingers (you can also use a meat thermometer for precision):
    Rare: 120-125°F (49-52°C)
    Medium Rare: 130-135°F (54-57°C)
    Medium: 140-145°F (60-63°C)
    Medium Well: 150-155°F (65-68°C)
    Well Done: 160°F (71°C) and above
    8. Once you’ve reached your desired doneness, set the steak aside again to rest for at least 5 minutes. Pour the basting juices, garlic, onions, and thyme over the steak.
    9. Trim off the excess fat, usually found on the edge of the ribeye. You can save this for other dishes by storing it in the fridge.
    10. Slice the steak into your preferred thickness (about 1/4 to 4inch is recommended), arrange it beautifully on a plate, and reheat the garlic, onions, butter, and thyme mixture to drizzle over as a sauce.
