Today's recipe is chocolate dipped madeleines.
Ingredients
Eggs 105g
Sugar 95g
Honey 10g
Cake flour 96g
Cocoa Powder 16g
Baking powder 4g
Unsalted butter 105
Dark Coating Chocolate 120 g
1. Beat the eggs at room temperature and measure them.
2. Melt the butter over the hot water.
3. Add eggs, sugar, and honey and mix.
4. Sift the flour, baking powder, and cocoa powder and mix them with no.3.
5. Add the melted butter into two and mix.
6. Refrigerate the dough for 30 minutes.
7. Mix the dough after the refrigeration rest with a spatula to make it uniform and put it in a piping bag.
8. Pan only 80-90% of the madeleine mold height.
8. Bake in an oven preheated to 190 degrees for 14 minutes.
9. Put 12g of melted chocolate over the hot water into a madeleine mold. (Make sure to set the chocolate temperature at 40-50 degrees Celsius.)
10. Place the madeleine on top of the chocolate and harden it in the refrigerator for 15 minutes.
