    봉긋하게 부푼 모양이 귀여운 카스테라 컵케이크를 만들었어요~
    간단하게 만들어 먹을 수 있는 기본적인 케이크 라서 자주 만들게 되는 것 같아요~
    반죽의 온도를 40도 정도로 따뜻하게 올려 풍성하고 조밀한 거품을 내야 완성도 있고 부드러운 케이크가 구워지더라구요~
    구움색이 난 윗면은 살짝 바삭한 느낌이고 속은 폭신폭신해서 정말 스펀지 같은 느낌이에요~^^
    설탕을 줄여 만들어 많이 달지 않아 그냥 먹어도 너무 맛있는 것 같아요~
    촉촉한 느낌은 아니여서 우유와 함께 먹어야 더 맛있게 먹을 수 있답니다~^^

    ▶재료
    달걀 100g
    설탕 65g
    꿀 10g
    바닐라익스트랙 2g
    무염버터 25g
    우유 25g
    박력분 80g
    베이킹파우더 2g
    ▶레시피
    1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 꿀, 바닐라익스트랙을 넣고 온도가 40도 정도가 될 때까지 저으며 섞는다.
    2. 핸드믹서로 풍성한 아이보리색의 거품이 될 때까지 휘핑한 뒤 박력분과 베이킹파우더를 체 쳐 넣고 섞는다.
    3. 녹인 무염버터와 우유을 섞어 둔(온도 50~60도) 볼에 반죽의 조금을 덜어 넣고 섞고 본반죽에 넣고 섞은 뒤 머핀틀에 붓고 기포 정리를 한다.
    4. 170도 예열된 오븐에서 20분 정도 굽고 식힌다.

    65g Sugar
    10g Honey
    2g Vanilla extract
    25g Unsalted butter
    25g Milk
    80g Cake flour
    2g Baking powder

    Note: If you don't have cake flour, you can mix all-purpose flour with cornstarch in the 3:1 ratio. That means with 80g flour in the recipe, you will need 60g of all-purpose and 20g of cornstarch.

      This is based on a castella cake recipe. It is a cake from japan that is moist and squishy, so it always bounces back. You should definitely try it, it is really good.

      @Shannon Lam No, it's castella as the title indicates. Chiffon and castella are prepared differently, their texture is similar but not the same. Castella is also more moist, making it suitable to eat on its own.

    This might be late but to help anyone who read this: If you don't have thermometer to check on the temp, just dip your finger into the mixture! It should be lukewarm temp like, just slightly warm (not hot!) and you're good to go. The heating (40°) is there to help you dissolve the sugar (especially when you use coarser sugar) and to rise the eggs mixture quicker when you mix it.

      I tried making these without a thermometer, but it turned out very foamy and wasn't overall the right consistency. I don't know what I'm doing wrong, would you maybe give me a tip please?

      @@petranguyen1375 By foamy do you mean it turned to some big bubbles rather than soft and shiny one when you mix it? Too runny? Usually it's because you just haven't whipped it long enough, but it probably won't take longer than 10mins if you heat it up first. Can you please tell me at what stage did this happened?

    Recipe 1. Place a bowl of eggs on top of a pot of hot water, add sugar, honey and vanilla extract and heat up to 40 | Stir and mix until a degree is reached. 2 . Whip until a rich ivory-colored foam with a hand mixer, then sift through the flour and baking powder and mix. 3. Put a little bit of dough in a bowl mixed with melted unsalted butter and milk (temperature 50 ~ 60 degrees), mix, put into the main dough, mix, pour into a muffin mold and air bubbles. 4 . Bake and cool for 20 minutes in an oven preheated to 170 degrees.

    Thank you so much for the recipe! I made it, they turned out beautiful, tasty and fluffy. No quite as tall as yours, but still excellent. I made a berry filling, and decorated with stabilized whipped cream, sprinkled with chopped pistachios and blueberries and raspberries. Gave them as a gift to my neighbors and they loved them!

      Elena Morales Hello again! I found some options on Amazon (UK) - it’s described as a “copper sieve” and I was able to find it by putting that into the search bar! If you’re from the UK (or it might work abroad too!) John Lewis store has them too! Hopefully that’s helpful! ☺️

      Cake flour does not contain a raising agent, self-raising flour does.

      cake flour is a variety of flour which has less gluten in it than normal flour! google what brands make cake flour in your country--in America, pillsbury and king arthur both make cake flour :)
