Giles Martin, his son, was involved in the arrangement. It's as good as what his father had done with the Beatles tracks.
The arrangements were crafted by Giles Martin and Paul himself.
The thinness has more to do with the filter that isolated the strings for this video, rather than the performance or original recording itself. If we could listen to the stems from the master recording I'm sure it would be very full sounding.
