Looks great! Very much the way I cook all my briskets. Hot and fast, wrap in foil and a blanket. Drop in a cooler "yeti" and let it finish. Beats babysitting all night in my book.
Look up Myron Mixon's fast and hot method. That's where I got it. Makes a good brisket fast and lets you go do other things withought babysitting it. Low and slow is a bit better but I have no complaints
Arnie, without driving 100 miles my local store always has select quality or local beef brisket (consistent price is $3.99 #). Are there any special considerations when cooking these briskets compared to choice quality? I have had varied results.
Pick one with the best marbling you can find make sure to do a beef tallow wrap and keep a close eye on the brisket to make sure you get through the stall nice and smoothly
What fuze below but also I find select to be much better when cooked at lower temps like 225-250 and do not overcook it, at low temps it should be perfect at 197-200 ish.
Warning!!! Make sure your grill/pit is pretty clean if doing hot and fast. First one I did 5 years ago I came out after about hour and half. All paint burnt off smoker. Opened lid and my 14 lb prime brisket looked like a black meatball. Smoker had caught fire and fatty brisket was just more fuel. Learned a valuable lesson

You'll never want to put a brisket over direct heat on a weber kettle, too much heat. Put your coals on one side and the brisket on the cool side. Put your lid vent over the meat. We normally cook them on an offset however my son did a 14lb'er on his weber kettle and it was great. Once you get your bark where you want it, wrap it and finish it. Let it rest at least an hour.
I have been cooking them hot and fast in my Pit Barrel Cooker for years. In my opinion it gets you 99% there compared to low and slow with 40% of the effort.

The little packer briskets are some of the best. I have a little smoker called a po man and it smokes some of the best food ever.
You think it’s possible to cook a brisket on a pellet smoker for three hours using those temps? Or does the direct heat make it cook faster? Thanks
