But that begs the question, how did Humanity know of Hel, Fenrir and Jourmungandr before tha asgardians? I think that only stone that he never obtained was actually the time stone; because as we saw in infinity war and endgame, the stone keeper would have likely showed him the possible futures where he collected all six. This probably scared him enough to change his mind and was why he decided to scatter the stones he had connected across the galaxy. Which his daughter viewed as the ultimate betrayal, as he sacrificed her mother to obtain one of them.
Odin has a way of putting qualifiers on items like Mjolnir and possibly the soul stone. I think the last stone he needed was the time stone and when he tried to take it found Thor's mother amongst the magic users or "witches" and she convinced him to abandon his quest. He then began hiding the stones in different locations or returning stones (reality) to their original hiding place, ala Captain America after endgame.

I think he did sacrifice something, and obtaining the Soul Stone is what changed him, not the act of sacrificing itself. I believe the Soul Stone has an effect on anyone who touches it, making them extremely reflective or empathetic, which could explain his transformation.
Really wish Marvel would complete the lore here. But if I had to guess, I'd say the other Gods and Cosmic Beings would unite against Odin if he tried to use all the stones. Some of the Gods and Cosmic Beings are immune to the effects. There's Cosmic Pantheon, The Beyonder, and One Above All. Odin was probably just tasked with safeguarding the stones/gems by them. Since he proved to be one of creation's most capable beings.

Ok, my hot take is that the throne of Asgard acts as a siphon pulling in the ambient energy/magic of the stones from the universe to create the "Odinforce." Odin no longer needed the stones and used the stones power to enhance and empower his favored. Thor (powerstone), Loki (time), Heimdall (space), and Frigga (mind). In the course of conquering the universe with Hela she found one of Null's Necroblades and like Gorr became tainted with its influence. I believe the final battle between Hela and Odin occurred on on Titan and its where Odin lost the Mind stone the course of the battle only to be found by a young Thanos. Hela gained the power of the "Odinforce" after Odin died because he enchanted it to pass to the true heir of Asgard. Since Thor had refused to be crowned as such it would fall to her and thus Asgard had to be destroyed to cut her power source. The Soul stone test, the enchantment on Mjolnir and the Odinforce all have this riddle like magic that appears to look the same and could be how Odin used the power of the soul stone to cast magic. I believe those empowered by the stone might also act as living stones, their powers drawing on the universe to empower them. Since the time line is broken when the stones are removed (big plot hole from endgame, since they are now "removed") I think existence forces them to be remade or reborn. Loki (time), Thor (Power), Love (Mind), Star Lord(Space), Scarlet Witch(Reality) and Adam Warlock(Soul) all make good candidates for for living Infinity Stones.
It never clicked in my head so now but it seems to me the meteor of vibranium that came to Earth and hit wakanda has to have been imbued with power by the power Stone they give off the same color like you look at some of the abilities it has and look at that clip of The celestial decimating that area with the power stone It looks like the same type of energy

I think Odin's "power" as All-Father is itself akin to what the power one would wield would be if one had all the stones together. Just that his power is much more low key than that. Which is to say that in a limited way he seems to be able to change reality doing things like what he did to Thor in Thor's first movie (taking away his powers until certain provisions were met), banishing Hela, etc. I think this was a great strain to him without the supporting energy and power of the stones themselves, hence the "Odin's-sleep" that he would lapse into periodically. It seems rational that he might choose to augment his power by seeking the stones, and even access to a few might have bolstered his abilities along the axis of the focus of the individual stones he had. I agree with you that the challenge of making the soul-stone sacrifice might have been an impediment that he was not willing to undergo. Nice video!

Depending on the amount of each stone they naturally carry in them.
