There isn't an easy answer here. It depends on what you mean by "best," The 1921 Peace is among the more sought after. The 22-S, 23-S, 25-S, 34, etc are among the lower mintages and higher values but there are differentiating factors. 1934s are available for a reasonable amount in circulated conditions, but can be very expensive in higher grades.
I love ancient Greek and Roman coins. Coins from the Middle Ages like the Italian city states - the Venetian Republic, Florence, Genoa, the Byzantine Empire, the Islamic Caliphate - Umayyads and Abbasids and Ottoman Empire coins
There is tremendous history in all of those nations coins. When I was young, I got started collecting US coins, and that has always been my focus. I do appreciate some of the more ancient coinage, and the Greek and Roman coins are amazing.
Peace silver dollars were minted from 1921 to 1928 and from 1934 to 1935. The rarest Peace Dollars are the 1921 proof Peace silver dollar, the 1922 proof silver Peace dollar the 1928 silver Peace dollar, the 1934 and 1935 Peace dollars. You have hit the jackpot if you have these coins. 1923 is the most common date.
There are also rumors of a 1964 Denver peace dollar that was minted specifically for casinos in Nevada. They were never fully authorized and the vast majority if not all were destroyed. It would be illegal to come forward and claim ownership of one anymore, so I doubt it will happen. If it did, though, and the government did not confiscated, it would easily become among the most valuable US coins ever minted.
I am not American by the way, I'm Canadian. I like certain American coins - the state quarters, the presidential $1 clad coins, the America the Beautiful quarters in 5 oz silver, the classic and modern commemorative half dollars and dollars. I prefer Morgan dollars to Peace dollars for the variety of VAMs.
Yes, Morgan dollars were minted for longer and in more different Mint. As a result, there are several different varieties that are recognized and well collected.
My favorite coins are semi-numismatic bullion coins - I would have to say my favourite bullion coins without a doubt are the Australian Silver Lunar , Kookaburas and Koala series by the Perth Mint. I also like the Chinese Silver Pandas and Mexican Silver Libertads. I'm not as fond of American Silver bullion - I do prefer the enhanced proof and proof American Silver Eagles to the BU versions.
I appreciate the American Eagle mainly because it is patterned after walking coinage of old. I find the design very appealing. I also like the Mexican Libertad’s and other semi numismatic bullion coins.
I hope you are not doing just American coins but world coins too. I collect coins from all over the world. The majority of coins in my collections are Canadian, American, Mexican, British, and Asian (Middle East, India, China and Southeast Asia)
If I had the same breath of knowledge about world coinage that I do about US coins, I would be very happy to include them. Unfortunately, I don’t know that I would be able to provide all that much education when it comes to other countries coinage. I do have the odd Krugerrand or Libertad or things of that nature but nothing that would really be considered world coinage.
I hear the 1921 peace dollar is one of the best

What peace dollar is the rarest of them all
A lot of people would say the 1928-P Peace is the rarest of them all. The various S mints also are pretty scarce and expensive,
