These both recipes are very commonly made in our sindhi families, instead of bhindi you can also try with lotus Stem (nadru), and the paratha you made is very similar to sindhi koki, only you missed the oil or ghee while kneading the dough, add some moyan to aata and see the results, the paratha becomes flaky
