The Best Chocolate Chip Cookie I've ever made! Trial Run of Cookie Exchange Recipes Episode 1

  • Hey my sweet friends! I have a cookie swap coming up so I'm trying out new cookie recipes to see which one makes the cut. And this just so happens to be the very best chocolate chip cookie I have ever made!! You must try it. It doesn't flatten or anything. They are absolutely perfect!
    Big Chocolate Chip Cookie
    1 c butter
    1 c brown sugar
    1/2 c sugar
    2 lg eggs
    1 tsp vanilla
    4 cups cake flour
    2 Tbls cornstarch
    2 tsp baking powder
    1/4 tsp baking soda
    2 cups chocolate chips
    Preheat oven to 375°
    Mix dry ingredients and set aside
    Cream in a mixer the butter and sugars. Add eggs and vanilla.
    Mix in the flour mixture and finally the chocolate chips.
    Chill dough for 30 minutes
    Drop by large cookie scoop 2 inches apart and bake for 14 minutes.

    Hi Leslie. My tip for hosting a cookie exchange is to ask everyone to take a photo of the recipes for their cookies with their phones so they're available to text to others during the exchange. These days lots of people don't want to spend time writing out several different recipes. Many years back I hosted a cookie exchange and had everyone email me their recipes in advance. I copied the recipe text from the emails into Word documents, included the name of the recipe and the contributor, then printed a bunch of copies of each recipe on cute Christmas paper and handed them out at the exchange. I guess I had a lot more time back then! I'm looking forward to your holiday recipes 😊

    Leslie, I make shortbread for Christmas to give as presents. The recipe is 9 ounces of butter, 3ounces of confectioners sugar, 3ounces of cornflour or cornstarch as you would say and 9 ounces of plain flour. The mix is easy, just put everything into your stand mixer and mix until combined. Roll into a ball ,place in fridge for 1 hour. Then roll out and use your cookie cutters to cut out. Bake at 350 for about 10 minutes. Be careful just until brown on the outside. Leave for a few minutes before removing from cookie sheet. Love, hugs and prayers from Belfast.xxx❤❤❤

    Leslie, I am a huge cookie baker and 2 of the best tips I could give you is to put your mixer bowl in freezer to chill before starting and always chill your mix up to 2 hours before scooping out to bake. Just my 2 cents 😂

    I avoid flat cookies by chilling my cookie doughs. In fact, I like to chill the dough overnight. I think it improves the taste (I even read an article that supports that idea.) When I want to bake the cookies, I take the dough out of the frig and let it sit on the counter for about a half hour, than start baking. If the dough gets too soft (cookies are spreading too much) put it back into the refrigerator between batches.

      I find it's best to scoop the dough prior to chilling. Then you can just pull out what you want without bringing the whole batch of dough to room temp. You can also freeze the dough easily this way.

    My exchange we had contests, everyone's favorite, cookie Santa couldn't resist, best packaging. Gifts were from cookie cookbooks, kitchen towels, etc from the dollar store. We made 1 dozen per person, plus 1 for the judging

    When I have hosted cookie exchanges, we all brought enough of each of our recipes for each lady to take home a dozen of every type of cookie. That way everyone gets a nice variety. Since each baker is only making 2 or 3 types, baking a double or triple batch is not that much work, and everyone takes home enough cookies to last the whole holiday season. Hope your exchange is a big success!

    If you use half crisco half butter they don't flatten out. I had the same dilemma with only butter.

      I’ve found that butter flavored Crisco works best.

    When I was working, we did a cookie exchange. We made a dozen cookies for each person in the exchange. We looked for fun containers or boxes to put each dozen in.❤❤❤ Have fun with your ladies.

    Leslie i went to one once. The cool thing the lady did was she bought dollar tree mugs put hot milk in them and double chocolate spoon with chocolate to make hot chocolate to go with our cookies. A nice keep sake a memory i won't forget. Was a lot of fun wish I could come to yours. Love your show

    Leslie, try adding a tablespoon of instant van pudding in your dry ingredients. I use that and my cookies always turn out fine.

    Leslie a company has given our church 2 cases of dark chocolate chips and i was searching for a chocolate chip recipe and this pops up because i watch you everyday at work on my break and that is a very different recipe that i am going to try!!!!!

    I struggled with my chocolate chip cookies spreading out when I first start d out, but changed the butter for butter flavored Crisco, and added a bit more flour to make a stiffer dough. That took care of the problem.

    I think putting the dough in the refrigerator to chill it might help. My husband would love them. I like my crunchy. I wonder if you bake them longer for crunchy. I have googled before about cake flour and I think it has the cornstarch in it. You can make your own. Thank you for showing this recipe. God Bless.

    Hi Leslie! Oh dear i am!going to try these cookies for my family. I went for 15 years to a cookie exchange. It was so much FUN and we all brought a dozen cookies to share and i dozen for the cookie tray. So if there were 17 people coming which tere wereyou brought 18 dozen cookies of the same kind. I always had so many cookies . Then we each brought a 10 dollar gift and we drew numbers and who ever number it was got to pick a gift. We also played games and won gifts. Then we ate and went home and looked forward to next year. Thank you Leslie for sharing this recipe with us.     Hi Leslie, I am definitely going to try this recipe!. My granson is in the Marines and stationed in South Carolina. He won't be able to come home for Thanksgiving. My daughter and son-in-law are leaving Thanksgiving night to spend a few nights with him. I was planning on baking chocolate chip cookies for them to bring to him because they are his favorite.     Leslie, I made Canestrelli cookies for a cookie exchange one year and it was a very big hit. They're so light and not too sweet, so delicious for anyone who doesn't care for a heavy cookie.

    The absolute best chocolate chip cookie recipe is on the Ghirardelli baking chips bag. I'm getting ready to try the white chocolate chips with macadamia nuts recipe. My family loves the semi sweet chocolate chip cookies. They are the best, so give them a try. Really great quality chocolate, and better than the Nestles Toll House chocolate chips.

    I've never used cake flour, I have only used regular flour. I did have problems with my chocolate chip cookies flattening also but my daughter told me to add additional flour a little at a time until the shiny appearance goes away and then bake. Works for me, no more flat cookies.

    So interesting how different tastes and preferences can be. I don’t know that I would even pick up a chocolate chip cookie that didn’t flatten out. 🤣 I work hard at getting mine to flatten!
    Tollhouse cookies for me all the time. Well. At least all the time when I could eat the chocolate! Haha. I’m so glad the recipe worked out for you tho!

    Two ingredient cake flour!
    1cup regular white flour
    2 tablespoons corn starch
    Remove two tablespoons of flour
    Sift 8 times
    Don't skip the sifting steps
    You can double or triple this recipe!

    I agree with everyone who suggests that refrigerating or even freezing the dough before baking. Another thing I suggest is trying AirBake pans, I swear by them. I used to make at least a dozen kinds for Christmas every year, along with candies, breads, rolls, salami, ranch oyster crackers, etc. Back when I was selling baked goods & made according to what sold out, planning was impossible. One day I had to make a batch quickly so I used the microwave to soften my butter. I ended up melting it by mistake and had to stop to tend to my toddler after mixing in half of the flour. When I came back a few minutes later the butter had begun to solidify again & I did not need to add all of the flour. I wondered if it would affect the cookies & it did-but in the best way! They came out so soft and moist on the inside while keeping their perfect fluffy shape. I have been making cookies the same way ever since!

    Cake flour has a lower gluten protein content, meaning it makes for a softer baked good. Its made from a soft wheat. Also, using a scale to measure dry ingredients means your recipes are exactly the same each time. Its impossible to exert the same level of force each time you scoop flour. This recipe looks like the one from sugar spun run, which I've made in the past. She uses weight measurements, too. I do flatten the ball of dough with my palm slightly to get more of a spread.

    I always add peanut butter and use all butter. This makes a soft fluffy cookie! Cake flour has less protein and gluten and is finer. You have to add more cake flour if a recipe calls for all purpose.

    Cake flour is pre-sifted and has corn starch added. You can make it at home by removing 1 tbsp flour and adding 1tbsp corn starch per cup of flour called for, and sift it before measuring.

    I made these cookies today. I added to much sugar, my fault, and didn’t add the cornstarch, and other then to much sugar, and I used monk fruit, they were good, I also added nuts.

    I don’t like using cake flour for cookies. I agree with Bryant, they tend to taste like cake. I like a flatter crispy cookie. But I will definitely make these when I need to take cookies somewhere!!

    Over the last two weeks, I’ve tried 8 new cookie recipes. My son is going on a missions trip in April to Mexico thru his school, Charis Bible College. I’ve been invited to a Christmas Vendor event this Saturday to sell cookies to help raise funds for his trip. It was fun to try all the different recipes and see what were winners, what could be tweaked and what were NO’s! Lol

    Cake flour is lower in protein than all purpose so what you bake is more tender. Bread flour is higher in protein to give bread more structure. Try European style butter -- it has less water than American style, so your cookies may not flatten out as much. Also, chilling the cookies before you bake them should help. Have fun at your cookie exchange!!

    Your cake flour is just much more finely processed. It tends to stay fluffier and lighter in your baked goods. It really does make a difference.

    Ok everyone...there is a huge problem with this recipe.
    These cookies looked great, so I had to try the recipe... including buying the cake flour. I mixed up the dough just like Leslie did. Then I tasted the dough. (Yes...I am a cookie dough taster!) I immediately knew something was wrong. There is NO SALT in this recipe! Baked goods need salt! I added some salt, and then it tasted right. I don't know if Leslie forgot the salt, or if the recipe was missing it. Sorry...these are not good without the salt!!

      I made these too. Dough tasted off and I noticed that the recipe didn’t call for salt. I didn’t add any and my cookies tasted strange.

      I know that she doesn't add salt if she is using salted butter. Salted butter does not have enough salt in it for this recipe (as far as I'm concerned). These cookies needed more.

    To be honest if you use white Lily you don’t need cake flour because white Lily is such a fine flour, also the cornstarch is why they didn’t flatten out. That’s what cornstarch does to a cookie

    I’ve never had a problem with Tollhouse cookie recipe…I also only have a hand mixer…maybe your big mixer mixes too much? Anyway..wow! Monster cookies😂I like my cc cookies a little crisp vs soft

    Lisa it says a large cookie scoop not an ice cream scoop. I imagine it would be smaller. "They look so good.

    Cookie 🍪 Exchange Ideas:
    I’d definitely also have some mini finger sandwiches 🥪 dips with crackers or chips. Serve hot cocoa and/or coffee, maybe have a few soft drinks on hand. Or also maybe a big bowl of punch. Make sure you have cookie 🍪 tins for everyone to take their cookies home in. Play Christmas music. On your table scape make sure you have enough platters and plates and cake stands for all the cookies brought. Add a centerpiece on serving table. Make sure in advance no one has allergies to nuts or other ingredients. And enjoy all the delicious cookies and friends/family.

    These remind me of the ones that I make using a cake mix. They don't flatten out either.

    I think if you add a little more butter, it should flatten a little

    Ice cream scoops and those used used for cookie dough are exactly the same thing except for size. Also I would almost always chill your cookie dough for the cookies to form properly. Take care & God Bless.

    Cornstarch helps cookies not to spread and makes them more chewy. Cake flour has less gluten which makes cookies softer. Ever had Lofthouse cookies?
