Hi Leslie. My tip for hosting a cookie exchange is to ask everyone to take a photo of the recipes for their cookies with their phones so they're available to text to others during the exchange. These days lots of people don't want to spend time writing out several different recipes. Many years back I hosted a cookie exchange and had everyone email me their recipes in advance. I copied the recipe text from the emails into Word documents, included the name of the recipe and the contributor, then printed a bunch of copies of each recipe on cute Christmas paper and handed them out at the exchange. I guess I had a lot more time back then! I'm looking forward to your holiday recipes 😊
Leslie, I am a huge cookie baker and 2 of the best tips I could give you is to put your mixer bowl in freezer to chill before starting and always chill your mix up to 2 hours before scooping out to bake. Just my 2 cents 😂
Leslie, I make shortbread for Christmas to give as presents. The recipe is 9 ounces of butter, 3ounces of confectioners sugar, 3ounces of cornflour or cornstarch as you would say and 9 ounces of plain flour. The mix is easy, just put everything into your stand mixer and mix until combined. Roll into a ball ,place in fridge for 1 hour. Then roll out and use your cookie cutters to cut out. Bake at 350 for about 10 minutes. Be careful just until brown on the outside. Leave for a few minutes before removing from cookie sheet. Love, hugs and prayers from Belfast.xxx❤❤❤

Since each baker is only making 2 or 3 types, baking a double or triple batch is not that much work, and everyone takes home enough cookies to last the whole holiday season. It was so much FUN and we all brought a dozen cookies to share and i dozen for the cookie tray. So if there were 17 people coming which tere wereyou brought 18 dozen cookies of the same kind. I always had so many cookies . Then we each brought a 10 dollar gift and we drew numbers and who ever number it was got to pick a gift. We also played games and won gifts. My exchange we had contests, everyone's favorite, cookie Santa couldn't resist, best packaging. Gifts were from cookie cookbooks, kitchen towels, etc from the dollar store. We made 1 dozen per person, plus 1 for the judging
I avoid flat cookies by chilling my cookie doughs. In fact, I like to chill the dough overnight. I think it improves the taste (I even read an article that supports that idea.) When I want to bake the cookies, I take the dough out of the frig and let it sit on the counter for about a half hour, than start baking. If the dough gets too soft (cookies are spreading too much) put it back into the refrigerator between batches.
I find it's best to scoop the dough prior to chilling. Then you can just pull out what you want without bringing the whole batch of dough to room temp. You can also freeze the dough easily this way.

I struggled with my chocolate chip cookies spreading out when I first start d out, but changed the butter for butter flavored Crisco, and added a bit more flour to make a stiffer dough. That took care of the problem.
I think putting the dough in the refrigerator to chill it might help. My husband would love them. I like my crunchy. I wonder if you bake them longer for crunchy. I've never used cake flour, I have only used regular flour. I did have problems with my chocolate chip cookies flattening also but my daughter told me to add additional flour a little at a time until the shiny appearance goes away and then bake. Works for me, no more flat cookies.

I always add peanut butter and use all butter. This makes a soft fluffy cookie! Cake flour has less protein and gluten and is finer. You have to add more cake flour if a recipe calls for all purpose.

I used to make at least a dozen kinds for Christmas every year, along with candies, breads, rolls, salami, ranch oyster crackers, etc. Back when I was selling baked goods & made according to what sold out, planning was impossible. One day I had to make a batch quickly so I used the microwave to soften my butter. I ended up melting it by mistake and had to stop to tend to my toddler after mixing in half of the flour. When I came back a few minutes later the butter had begun to solidify again & I did not need to add all of the flour. I wondered if it would affect the cookies & it did-but in the best way! They came out so soft and moist on the inside while keeping their perfect fluffy shape. I have been making cookies the same way ever since!

Cake flour is pre-sifted and has corn starch added. You can make it at home by removing 1 tbsp flour and adding 1tbsp corn starch per cup of flour called for, and sift it before measuring.

Cake flour has a lower gluten protein content, meaning it makes for a softer baked good. Its made from a soft wheat. Also, using a scale to measure dry ingredients means your recipes are exactly the same each time. Its impossible to exert the same level of force each time you scoop flour. This recipe looks like the one from sugar spun run, which I've made in the past. She uses weight measurements, too. I do flatten the ball of dough with my palm slightly to get more of a spread.
Cake flour is lower in protein than all purpose so what you bake is more tender. Bread flour is higher in protein to give bread more structure. Try European style butter -- it has less water than American style, so your cookies may not flatten out as much. Also, chilling the cookies before you bake them should help. If you use half crisco half butter they don't flatten out. I had the same dilemma with only butter.

Cook for 10 min because they will cook more on the pan I work at Kroger I work in the Bakery and that what they told me I baked a lot of them

Also, using a scale to measure dry ingredients means your recipes are exactly the same each time. Its impossible to exert the same level of force each time you scoop flour. Your cake flour is just much more finely processed. It tends to stay fluffier and lighter in your baked goods. It really does make a difference.

Cake flour is lower in protein than all purpose so what you bake is more tender. Bread flour is higher in protein to give bread more structure. Try European style butter -- it has less water than American style, so your cookies may not flatten out as much. Also, chilling the cookies before you bake them should help. Oh my . . .cookies are my favorite thing to make! I have never heard of cornstarch in them. I have to try for sure!! ALSO HAVE TO ASK - - in several videos I have seen you use measuring cups and measuring spoons that look like they are copper and have wooden handles. They are SO pretty. Do you know where you got them??? Now. . . ..Off to try some cookie baking!!
