This channel was one of the inspirations to start sourdough baking. I make my sandwich loafs in a Pullman tin with a lid. I do coil fold until it passes a windowpane test. The sourdough hasn't even started rising by then so I just coil fold it into the tin and flatten it. Easy! 🤭

I love the end pieces of fresh homemade bread. It's so chewy and tasty with butter. They can keep the store bought stuff though!
The jelly roll dough looks like a plain white caterpillar when it goes in its 16 inch cocoon and then magically emerges like a beautiful golden butterfly! It’s a miracle! 🐛🦋 🍞 BTW, Nicole’s sourdough course is terrific!

My Granddad liked the end pieces. Its good for sop bread, to clean the plate or bowl.

Great video, Nicole. How about if you tilt the pan 90 degrees on its side, then roll the cylindrical dough into the pan? But your method was great as well👏👏👏👏

Why not tilt the pan (opening facing you and not up) and roll the dough inside ?

you can measure bottom of your pan which is smaller,and put two tape on the table with the measurement apart

I'm a country loaf end-piece kind of person, for sure. But I make this loaf for my kid's school sandwiches, and he definitely prefers the soft middle!

Make sourdough rolls, or even olive bread rolls etc.
(I've been fantasizing about making sourdough with olive tapenade mixed in the dough.)
Slice them in half and every piece is an end piece.
