You will have to double the amount of baking powder when using it in place of baking soda to get the best result. For instance, if the recipe says 1 tsp of baking soda, while substituting, you will have to use 2 tsp of baking powder.

You can soak the peanut a day before but ensure you dry it immediately after soaking.

No need to do that. Besides, the peanut peel is very medicinal. Make it a habit to chew your normally fried peanuts with the peel on.
