The Oldest Cookbook of the West is in New York City | Gastro Obscura

  • If you’re in the mood for some cookbook history or craving some medieval recipes, we suggest browsing the oldest cookbook in the West. The medieval cookbook Apicius was written in the year 830 in Germany, and contains recipes dating back to the 4th century. Today, it’s located in the New York Academy of Medicine. Our friend Emmymadeinjapan made a trip to browse through the cookbook, and we challenged her to pick a recipe to recreate in her own kitchen. It presented, as you might imagine, quite a few obstacles!

      @@atlasobscura -- Master of [one of the] ancient Roman recipes, anyway. And wonderfully done -- yayyyy, Emmy!
      The manuscript as a physical object may be medieval, but the monks were copying from an older text. It's essentially a compilation ultimately based on a 1st century CE text in classical Latin, with additional later recipes in what is known as "Vulgar" Latin (vulgar in the sense of "inferior" compared with the older, classical, literary language). I'm honestly not sure how many texts of "Apicius" there are, some with more recipes, some with fewer, and some others with different recipes, or what their dates are. I think the version Emily saw was the probably late 9th century "Fulda" manuscript, thus called from the monastery where it was copied. Presumably the text those monks used (possibly even more than one text, combined?) is no longer extant.

    I LOVE old book collections! The scent of paper, ink, leather and time, the voices within the books (yes! Books have voices! Libraries are full of quiet murmurings)...
    My oldest book was printed (you can feel the imprint of the type on paper) in the late 1790s.
    This is a delight to watch.

      I love old books too, for all the reasons you mentioned. My daughter has a few books that have been passed down in our family for generations, a handful of which are so old they don't have copyrights. We don't handle them, but every now and then I love to just open their cabinet for a second to smell them.

      @@JuBeeJuBeeJu The History of Greece is wrapped in paper and stored carefully, but I look for excuses to bring it out and do my "lecture" on paper and print... (Librarian's daughter all the way) give careful folks a chance to have the tactile experience of different papers and printing techniques.

    My son is in his second year of Latin. He is already a love of wordsmith. They dropped French in his school and we discussed how language is formed and the true root of languages. I’m so proud of him. He loves Latin. My mother knew Latin as well. There wasn’t a word she couldn’t spell or explain.
    Oh I’d love to sit for hours in that library and soak in the knowledge of our yesteryears.

    Great collab! Emmy was a great choice - she's adventurous, curious, willing, intelligent, and able. She made it look feasible for any of us to try and enjoy a recipe from a cookbook from ancient times!

    This recipe reminds me of Jerusalem kugel, or "kugel yerushalmi" it's kugel from thin egg noodles that absorb a mixture of egg, black pepper, and carmalized sugar that form into a kind of dense cake that you can slice. I know it sounds awful and super weird but it's absolutely amazing and so unique. It's sweet (but not too sweet) and has a nice flavor and kick of spice from the black pepper. The pepper is what really makes the recipe good, it takes something that would have been plain and sweet into something with a complex, deep, almost smokey flavor and the texture is really interesting too. If you haven't tried kugel yerushalmi I definitely recommend finding some to try. Ohhh, I love me some good kugels!!

    I am absolutely floored that an actual librarian would date this work to a COPY of a book that is generally recognized as a ROMAN cookbook. It is true that there is some evidence it was Late Empire - that is, around the fourth century, but it most certainly was not WRITTEN in that monastery anymore than the copies of the Bible that were probably produced in the same place (Laurioux: "The text itself was not set before the fifth century""- Cuisiner à l'Antique : Apicius au Moyen Age, Médiévales Année 1994. p. 18 - Bruno Laurioux). Nor is it known today as the Apicius, a shorthand term which misleadingly suggests it was written by a Roman epicure - by scholars, it is more precisely known as De Re Coquinaria (Of the Realm of Cooking). Plus, I see Atlas Obscura has propagated the same errors to another video. - I can't believe an actual librarian doesn't actually know all this, so I can only think she was being careless in her language. Unfortunately, the end result will be thousands of Atlas Obscura readers thinking this is an eighth century work and that its actual title is "Apicius". And that people in the Middle Ages ate flamingo, which they almost certainly did not (mainly because it was a southern bird; they did eat crane.)

      Often the best way to handle books and manuscripts is with clean, dry hands. Wearing gloves can mean the books are more likely to become damaged as you cannot feel what you are doing. Minimal touching is best.

      Sophie H very right. also, depending on the material of the paper and the type of gloves, either can catch on the other and cause damage that way.

    Aren’t they supposed to wear white gloves when they are handling this kinda stuff to protect it????!

      If you're surprised by the lack of gloves, you're not alone! We asked the curator, and she mentioned that gloves can dull the sensitivity of the handler's fingers, so books usually sustain more damage when being handled with gloves.
