Yes Rachna, you could make this without maida. However the taste would be different. At home I have made both ways for my family. They like the maida version better.

Madhu, poori ke dough ko smooth cylindrical log ki shape mei roll kar len. Phir jis size ka payda chahiye oosi size ke pieces knife se cut kare (hand se na karen). Ek piece ko haath mei pehle flat kar le, phir haath mei gumate ghumate round shape ka kar len. Isse payde mei cracks nahi aayenge.
