LOVED the Amrakhand recipe chef!! I am maharashtrian and Amrakhand-puri and amras-puri are in top 5 favorites in marathi households. For Aamras, we don't blend mangoes with blender, but mash them with hands so that they retain their lumpy texture which is very essential. Along with sugar, we also add milk OR ghee in it and then it becomes aamras....my 2 cents.
My kids love the curd we make at home and they love mangoes..this will be a lovely surprise for them..thank you for the recipe..we watch your recipes together and make them together too..it's like a great way for us to bond..
Can we just take a moment to appreciate how comfortable he is using his hands to mix things on camera? I have seen so many chefs who use a spoon for the initial mixing and then just skip the whole process and directly show the final product of mixing. (They might be skipping due to time constraints and that's okay, just pointing out a difference i saw.) I don't know if somebody mentioned this already in his previous videos. I started watching his videos just recently, and within a couple of videos i became his fan. And i love the way he is so interactive. I never saw a person who has so much knowledge about the global history of the ingredients he uses. It shows that he really loves what he is doing. Keep it up!! 👍👍

Gujarati me 'be padd wadi rotli' kehte hain.. mango season me main rice bhi aamras ke saath khati hu..kabhi khakar dekhna bahut tasty lagta hai.. Great Recipie. I have enjoyed it since last 3 decades. One suggestion though : Best aamras is made using hands and not blender. Fine puree is not expected but small lumps gives more texture to Aamras. Keep it up sir, you are the best. Congratulations on 5 millions.

It’s called Rasayan… made of Aamras jaggery and sometimes they put little elaichi powder also… quite nice. I personally have eaten this Aamras only from Raspuri variety of mangoes available in Bangalore

After watching this video, I came to realise that I have been eating aamras since my childhood. We just didn't have a name for this. In my family we just call it aam chotkano (mashed mango). Even if I am from Kolkata, this is a very typical summer-y food from bangladesh (my grandfather was from Khulna). I like to have it with crispy toast. Breakfast lunch dinner - toast and aam chotkano - I can have it at anytime of the day.
A little trick from Maharashtra, add a 1/4 tsp of coarse black pepper powder and a pinch of salt to the Aamras. And DO NOT FORGET your param mitra ‘Ghyo’. It will elevate the dish to a ‘legendary’ state. @ChefRanveer

Hi,we in Konkan region make a spicy curry with baby mangoes ( fibrous tiny mangoes joh chusk chusk kaar khatai hai)..thus,these mangoes r treated more like a vegetable rather than a fruit...it would be great if u can showcase the Konkan recipe ' Ambe Upkari'..unfortunately I don't know what those tiny firm mangoes r called in English...we just tell the veggie vendor, upkari ka aam.the 'monopoly ' of this recipe is that the mangoes r kept whole,ie we don't cut it..whole baby mangoes floating in a spicy sour gravy
Gujaratis also make something called ‘gotla nu shak’ which literally translates as Gutli ki curry / gravy . Similar concept. Methi seeds go in it apart from mustard seeds , mirch ho powder and many other things. We use desi local fibrous mangoes which don’t go by any branded names like Alphonso or kesar but it’s solely a local variant. The Pulpy chusi hui guthliyaan are dipped again and again in Rassa ( pulpy gravy )… it is yum!!!! My mom makes it really well!!

I really appreciate Ranveer ji 's vital tips of kneading with a combination of Wheat flour and Semolina with a perfect balancing. This is what you get from a professional chef who is a true teacher. I learnt many good recipes, rather loved to make good pakwans getting lot of inputs from many stalwart chefs in UA-cam and Facebook. I am a fan of Mr Zakir Qureshi and Sanjeev Kapoor ji. I admire them, not just bcoz they shared a good recipes but shared many crux of cooking art and secrets that is normally not shared in earlier days and even now. But I also found Ranveer ji , who not only shares good and authentic recipes but also the special (minute) secrets and crux of cooking, which is no less than a rocket science. Yesterday I made a fusion of making soft and silky smooth Galawati Kebabs in Lucknavi style, simmered & served in a smooth white gravy (same,that of Malai chicken). it was served with sheermal. My son's loved it. The kebab was as soft (that melts in mouth) and smooth when eaten normally (directly from Pan) and as well as when served in fusion recipe with Malai (milk/ cream based white) gravy. It was a grand success and by God it was as good/ soft as Taundaiyya Kebab of Lucknow . My son gave me a compliment that mine was better. I will definitely one day share my fusion recipe to Ranveer Ji .🙏

Yes in UP too. We call it "Tapka". I think Ranveer has shown it before.

I really appreciate Ranveer ji 's vital tips of kneading with a combination of Wheat flour and Semolina with a perfect balancing. This is what you get from a professional chef who is a true teacher.
I learnt many good recipes, rather loved to make good pakwans getting lot of inputs from many stalwart chefs in UA-cam and Facebook.
I am a fan of Mr Zakir Qureshi and Sanjeev Kapoor ji. I admire them, not just bcoz they shared a good recipes but shared many crux of cooking art and secrets that is normally not shared in earlier days and even now.
But I also found Ranveer ji , who not only shares good and authentic recipes but also the special (minute) secrets and crux of cooking, which is no less than a rocket science. Yesterday I made a fusion of making soft and silky smooth Galawati Kebabs in Lucknavi style, simmered & served in a smooth white gravy (same,that of Malai chicken). it was served with sheermal.
My son's loved it. The kebab was as soft (that melts in mouth) and smooth when eaten normally (directly from Pan) and as well as when served in fusion recipe with Malai (milk/ cream based white) gravy.
It was a grand success and by God it was as good/ soft as Taundaiyya Kebab of Lucknow . My son gave me a compliment that mine was better. I will definitely one day share my fusion recipe to Ranveer Ji .🙏

We cook chapati normally with or without ghee and then after a day (so that it gets dried up well) we deep fry it. Simple
