Hey Leah, I love the recipes, but just a tip for the Moroccan one! Tagine and couscous are technically 2 different dishes. Traditionally tagine is a thicker stew eaten with Moroccan bread or some baguette (we take pieces of bread and pick up the stew out of the pot/pan using the bread and our hands). Couscous on the other hand is usually made with a really brothy stew on top and is often served with buttermilk as the drink of the meal. Just thought I'd point that out if you ever want to try more Moroccan dishes, love the video!
Couscous is such a life saver when you don’t have much time to cook and you’re craving some good ol carbssss 😍 I cook a 5 min salad with it, with fresh tomatoes, olives, onions, garlic and maybe some feta cheese, with a simple olive oil dressing and some herbs, and it’s soooo refreshing and tasty! That little nervous smile of anticipation of yours each time he's about to dig in is just so cute, though ^^ I had a tajine and couscous mania a few years ago, so I know how it feels ! These are definitely comfort food ! And agreed about the joys of discovering a new recipe. I've been cooking for more than 24 years, now, after my mom taught me the basic logics and steps of chinese cooking, and it has been a merry chase of textures, tastes, flavors, and colors ever since. Well, not everyday, of course. There are sometimes some long periods of time when I just get comfortable and always cook the same 4-5 dishes over and over again. But every once in a while, I get curious about an ingredient I never tried cooking before, realize how easy it is (hello chickpeas and couscous), and just incorporate them in almost all my previous dishes, Now my dishes are like monstruous mountains of random lego pieces patched together ^^. (but still tasty ^^) Or I just come up with entire new dishes altogether. And when it works, the feeling is just so glorious ! You feel like you've climbed on top of a mountain with a beautiful view, or something. So, where do we post our own recipes for you to try next ?
When he said that the Tajine is not typically like a dish that you present beautifully, I was shocked because, as a Moroccan, I was like, how'd he know? That aside, cooking a Tajine in a clay pot tastes HELLA different and delicious but doing so in a regular cooking pan is okay.

I was surprised when I heard you saying Ras al hanout haha Ras al hanout means literally 'The head of the shop' in moroccan, it's like all the best spices mix the shop has to offer You should try more of Moroccan food! Hey Leah ,for the chickpea recipe you made in the beginning it is an Indian regional dish . We call it cheela and not omlette at all !!😅😂 Its pretty famous in bundelkhand region the spices such as turmeric are mostly used in Indian food. Would love if you see this 🥰 Ps. A little tip on making that: don't put too much batter on the pan its supposed to be thin like rice paper .

cous cous is literally the easiest thing, i just put in a bowl and pour hot water and add some spices, let it sit for a bit and then add cucumber, bell pepper and red beans. Season with more salt and pepper if needed and add a bit of oil and lemon juice. Super easy, quick, yummy meal. ooor I put in in pan and just add garlic and zucchini :)

You don't necessarily need to put the Tajine in the oven. Simmering it on the stovetop is also fine. This is what we do all the time and it also works super well! 😊😊😊

I looked forever for black salt in grocery stores and finally gave up and bought some online and I don’t regret it at all! It’s almost creepy how much it tastes (and smells) like eggs. My boyfriend and I love it on avocado toast and when making vegan egg recipes. If you want a recipe that will blow your mind try the “Deviled Potatoes” recipe from “It Doesn’t Taste Like Chicken”, you’ll need the black salt though!
I love the vegan chickpea salad! I do a really lazy pantry version with just chickpeas (obviously), Mayo, mustard, and lots of chopped pickles for texture & sour / acid. My favorite weekday sandwich! 🐟

in Brazil we call this recipe "Grãomelete" which is a vegan version of the omelet, but made from chickpea flour and vegetables. we vegans love this recipe ❤️ it's so practiced, delicious and nutritious! Hey Leah, I'm so surprised you've never made couscous before (it's in like 90% of savoury meals at my house lol), but then again your staple dishes might be something I've never tried before which is kind of cool. Anyway, a quicker way to cook couscous is put it in a bowl of water, put a covering over it and microwave it (probably start at like 1min) or you can just put it in a bowl, pour boiling water over it, cover the bowl and leave it to fluff!
recipe: half a teaspoon of garlic powder leah: proceeds to deposit half the contents of the jar into the pot 😂😂😂😂😂😂 eyeballing is always the best anyways
I love chickpea flour. The best (and cheapest) can be found in Indian supermarkets, I think it's milled finer than the ones we find in healthstores, and makes for a smoother batter. Chickpeas are great!

Black salt makes the difference for vegan "egg" dishes. You can find it in the Indian cooking section of grocery stores if your shop has that.

in Brazil we call this recipe "Grãomelete" which is a vegan version of the omelet, but made from chickpea flour and vegetables. we vegans love this recipe ❤️ it's so practiced, delicious and nutritious! I like to add carrots, spinach, onions, leeks and tomatoes, very good!

Hey Leah, I'm so surprised you've never made couscous before (it's in like 90% of savoury meals at my house lol), but then again your staple dishes might be something I've never tried before which is kind of cool. Anyway, a quicker way to cook couscous is put it in a bowl of water, put a covering over it and microwave it (probably start at like 1min) or you can just put it in a bowl, pour boiling water over it, cover the bowl and leave it to fluff!

I love chickpea flour. The best (and cheapest) can be found in Indian supermarkets, I think it's milled finer than the ones we find in healthstores, and makes for a smoother batter. Chickpeas are great!
