Like the movie " Water for Chocolate". The food is enhanced based on the cook's mood. My mood is always revealed when I make my tamales! and other dishes.
Have just finished Jacques Pepin book the Art of the Chicken. Such a lovely book written with love which comes through the pages to the reader. I am melting vanilla ice cream In order to make his French Toast for breakfast in the morning. ❤❤❤
The only cooking programs I enjoy more than Jacques's are those when he is cooking with Julia. Two world class chefs with absolutely no ego issues. Such a refreshing departure from today's world of drama queen, "it's all about me" chefs.
This is awesome! In Northern California we get trout year round! Going to make this the next rainbow I catch. Minus the caviar most likely but the way he cooked that trout sounds amazing. Especially the sauce!
If you're going to go out - go out with a bang! Should I ever be hunted by aliens (or cannibals for that matter) I hope they at least bother to cook me well! Lol
This is nice and French food nice but Farestart a company that he partnered with is a highly discriminatory company that doesn’t even allow me to eat in their restaurant on racial bias. That said I have eaten French food in France and my Corsican-Hispanic Puerto Rican mama poached a trout or two in her life. This crepe dish he has made reminds me a lot of more Russian buckwheat crepe based varieties of crepe dishes I have been making. I also really like crepes. Very nice Mr. Pépin. I should have never doubted that they would have tricked you into doing something that little did you know is against the good ways of life. One of my best memories in France was in the South of France where my family and I ate trout in a cottage that was run by hydroelectric power and had a stream running right next to it. All the trout were local from the river and it was one of the most beautiful sceneries in my memory. Who needs Farestart when we’re already a well-trained chef?
I had to look up Farestart. It's one of those "culinary training" places. But that has nothing to do with this video. It's best not to eat food cooked by people who are being trained, perhaps badly, anyway :-) I suggest that both recipes that M. Pepin prepares have Russian origins, especially potato pancakes with (American!) caviar(?) and sour cream.
It always seems odd to me that all TV chefs use unsalted butter, and then they add salt to the dish. At least Jacques seems not to have any pretense about "kosher" salt (just larger grain, not important in wet dishes).
The reason for using unsalted butter is so that YOU can control the amount of salt to taste, rather than the creamery/dairy controlling the amount of salt.
@@seikibrian8641 that would be my assumption too. Also salt can be found in numerous ingredients, like olives, ham, soy sauce etc so I guess they want to be careful about balancing it out.
When asked what they are fed, she first says fish meal, and later says no animal products. Fish are animals. I have no issues with feeding fish fish, it is what most fish eat. Had a friend that farmed trout, looks like a great operation producing a good product. But I am in the call it roe camp. Which I love and suits my budget better than caviar.
I agree that fish are animals, but many "vegetarians" admit that they eat fish. Some even admit they eat chicken, too. They are really "non-red meat-itarians".
I cringed when they were tasting the caviar and each was only using one spoon. To avoid contaminating the whole amount, it's proper to scoop it off the table with one spoon, then drop the spoonful onto a second spoon that you put in your mouth.
@Robert Leonard It may have been before SARS-CoV-2 (Covid-19), but it is still an unsanitary practice at any time. In addition to being trained in infection control practices at a large hospital where I used to work, I'm also a trained cook and had a state-issued food handlers permit. What they're doing in this video would have got them a warning, at the very least, if a food safety inspector had been there.
No matter how clean that water is in that fish farm those fish are eating engineered food, living jammed together in an unnatural environment. Being in those tanks (raceways) completely destroy what that originally clean water had in it. Nothing natural about that environment or the stuff they are eating. Surprised Pepin would use such a lousy prodduct. If the fish were eating natural food from a stream their flesh would be very pink or even reddish from all the aquatic and terrestial insects along with fish eggs. It's the same reason they dye farmed salmon so they look natural instead of pale or white like these fish do. Yuck!!

I have been using Jacques' recipes for 40 years!

When I was a kid we would buy those red eggs in a little jar, put an egg on a fish hook and catch a fish. We never thought of eating the eggs.
