- There are varieties of laddus from different ingredients. But boondi laddu can be called as king of laddus as the picture of it comes to our mind, when someone says laddu. It is very simple if some tricks followed. First of all boondi must be perfect. Second is take care about sugar syrup. the main ingredients are gram flour, sugar and oil for frying. Dry fruits and cloves/cardamom can be added to enhance its flavour. This can be stored for about 10-15 days.
Ingredients:
Gram flour 3cups (400 grms)
Coconut oil for deep fry
Ghee 10-12sp
Cashew nut
Raisins
Cloves
Sugar 3cups (400grms)
Water

Dear Sudarshan, You not only have expertise but also nimble fingers to roll laddus. Getting the correct string consistency of sugar syrup is most difficult for any sweet making. In case case of barfis we just pour the hot preparation into a tray and we will not touch for some time. But in case of laddus rolling them when slightly hot requires patience and skills. Adding cardamoms, hasiru karpoora, bits of almonds and some crystalline sugar will lift the laddu to a different level. Good luck Sudarshan. Please continue to show us your skills. I suggest you release a video album on your recipes and also publish a booklet on delicacies of Karnataka.
