I’ve made this so many times in the past year. The video was sent to me by a co-worker after I ate her cucumber salad and begged for the recipe. Most of my Asian friends and family don’t like the harsh bite of onion so I use less. I add julienned carrots for crunch and sweetness. For those worried about saltiness, start with less salt, then taste the cucumbers to for flavor. Add more salt as needed. Only rinse if cucumbers are too salty. Otherwise it’s unnecessary. Rinsing can also make cucumbers a little mushier. Make extra to store in fridge for lunch, dinner and for snacking. This recipe is a WINNER 😋😋

I’ve prepared this before. But, on my recipe, I rinsed the salt off the cucumbers after I left them in the salt for about two hours. Everything else is basically the same. It’s really good. I like regular cabbage kimchi, radish kimchi and cucumber kimchi.

411 for ingredient/subbing questions: Gochugaru is a Korean spice; think of it as like paprika but spicier. It comes in a bag as opposed to a jar and is often used for making broth/soup. If you cant find this powdered spice, mix some gochujang (spicy korean paste found in most mainstream grocery stores) with a bit of water to create the consistency of your liking. Onions: it doesnt matter if they are white, yellow or red. Use the onions you like best. Adding green onions is a must IMO Subbing rice wine vinegar: I wouldn't, as it has its own distinct flavor. You can grab a cheap @ss bottle at Walmart or TJs. Subbing sesame oil: Never, my love. Sesame oil is the cornerstone of many Korean recipes and cannot be subbed with things like olive, canola, or vegetable oil. Its not illegal but the taste will be completely off. Ive subscribed and shoulve long ago. The dedication of this woman has😊 inspired me too many times. PS: For yall, one of the best cheap, easy, and delicious meals out there is grilled/baked/airfryed chicken prepared whatever way you want, along with steamed rice and this cucumber kimchee. Its so bomb, and easy too. Your tupperware may be stained AF tho 😂😂
@MJJYANA It's a great addition, as it adds another dimension of flavor. It's not absolutely essential, though. This is one of those dishes that is kind of Ike mac n cheese in some respects. There is Rhiannas recipe, Gordon Ramsay's recipe, Pioneer Woman's Recipe, and there's Kraft in a box. You can't go wrong because it's Mac n cheese, kwim?

😋😋 I can't do onion in mine. One thing I like to do is slice them kind of thin and soak them a bit in heated soy sauce, garlic and red pepper flakes. If I'm out of the flakes I'll use hot sauce. The look on my wife's face the first time she had it 😅.

As a Korean, I'm pleasantly surprised that cucumber kimchi is so loved. I personally don't like it because I don't like cucumbers, but I can still see why many like it. It's such a refreshing dish with the perfect amount of spice. I'd highly recommend to anyone, as long as you don't dislike cucumbers like I do lol.
My 8 year old niece and 3 year old nephew loves this dish they ask for it a lot everytime they go to the Korean grocery store they want to buy 5 containers of them ! Finally my sister in law learned to make it so when she does make it for them she makes them in big batches they will finish it in a week !!
Just made this, only difference is i had seedless cucumbers instead of Persian and i added a bit more sugar. Can't wait until it marinara overnight but it looks great already!

Being an expact in China this is one of my favorite side dish. It's kimchi and i order 凉拌黄瓜 each time in restaurant. Yesterday i went one a restaurant's kitchen and asked them which sauce they used. it was 酱油 in it. i am learning chinese cooking in these days.

I didn't rinse
My mom usually gives them a rinse but it's totally up to you!
You don't have to rinse them but make sure to discard the cucumber water well.
You're adding salt to get the water out, so rinsing would defeat the purpose. Maybe just wipe it off with a paper towel.
If you don't rinse well, you will have very salty cucumbers. Happened to me, other than that this recipe was delicious!!!

I love that too because it's got a little sweetness from the cucumber. It balances with salty and soury taste that cause by the fermentation.
