While it may raise eyebrows, the difference is that the UFC is never explicit that striking will earn the fighter more money/title shots and they don’t pay explicitly for a fighter to stand and bang. In fact, grapplers like Colby, Kamaru, Khamzat, GSP, Chael, Khabibb, Hughes etc have had great financial success as grapplers. And many strikers receive less money and shine than many grapplers. It’s the “if you’re exciting, you’ll earn more”

It's not against the law to control the rankings and matchmaking, it's illegal to affect betting outcomes. I know it sounds like a technicality but even from a moral standpoint it's extremely different.
@ Karl Williams was told to not shoot a takedown against Jhonta Diniz before their fight. Someone who is known to shoot a takedown against a KO artist with a clear path of getting the takedown and keeping the guy down there being told not to shoot a takedown is clearly messing with the outcome of the fight

the top UFC fighters make too much compared to those on the early prelims. lots of the top fighters fight once a year or even less compared to someone on the early prelims who sometimes fight 3 times a year
