Do any of you know how to like properly save the game though like do you only ever have to use the manual save option once for the one slot or should you always overwrite your current saved data? I always overwrite it but it’s been bugging me for years since the first game if I’ve been doing it right or not for the last 3 nearly 4 years!

yes it does. when you're about to play, under continue, press load game, and select the manual save.
It doesn't save
