Neapolitan Bundt Cake Recipe | Strawberry, Vanilla and Chocolate sponge | Cupcake Jemma

- You guys should know by now that we absolutely LOVE a bundt cake and also ice cream... So it only seemed fitting to put the two together and make a Neapolitan bundt cake right?! Jemma's showing you how to make this super easy recipe - 3 flavours all in one? Some would call this a triple threat... Super squishy & moist vanilla, chocolate & strawberry pound cake all marbled together and topped off with a crackly glaze? PERFECTION!
290g Soft Butter
185g Cream Cheese
415g Caster Sugar
5 Eggs
Pinch of Salt
1/2 tsp Vanilla extract
Vanilla:
100g plain flour
1 tsp vanilla
1/4 tsp Baking Powder
Strawberry:
80g plain flour
3 tbsp strawberry powder (15g)
Food colouring
1/4 tsp Baking Powder
Chocolate:
30g cocoa
70g plain flour
1/2 tsp vanilla
1/4 tsp Baking Powder
Glaze:
450g Icing sugar
9tbsp Milk

Maybe some sort of strawberry essence? And replace the 3 tablespoons of strawberry powder with regular flour so you still have the same amount of dry ingredients. That’s what I would do. The amount of strawberry essence you’d have to adjust to suit your taste.

Can you use cake release spray instead of butter?
Hi Jemma, Can you show how to take out the cake from the mold? And should I take out the cake from the mold while it is hot or wait for it cool? Thanks.
Just leave it to cool for 10 minutes and then pop it onto a cooling rack, give it a light tap all over with a rolling pin and it should come out east as long as it’s been well greased
Is it possible to substitute the cream cheese for anything else?
You could try yoghurt or buttermilk perhaps. Or soured cream.

What is the ingredients measurements please
In greasing and flouring my cake pans I substitute the flour with granulated sugar. Works like a charm. I was taught this years ago when I took a cake decorating class and used those character pans with all those grooves
Wouldn’t the sugar caramelise and go sticky when you bake the cake?

I made this cake this weekend. It was soooo good. I couldn't find strawberry powder so I put some freeze dried strawberries in a foodprocessor. Worked really well.

Just a quick question. Does that strawberry powder make the sponge gummy? Asking because there's an amazing strawberry cake recipe I've been using for a few yrs. When the creator of said sponge was doing some testing the powder did make it gummy. However a reduction of strawberry puree gave it the flavor the creator was looking to achieve without adding any extra moisture... 🤔
That’s kind of backwards. Strawberry powder adds no additional liquid while preserving a fresh strawberry flavor and does not make cakes gummy. Reductions give a cooked strawberry flavor and absolutely do add liquid.
Finally it's my favourite Jemma!! The lighting in this video is unnatural and cold. Prefer the previous warm hues that I feel reflect c&d's homey feel.

We don't really get frozen berries powder where I live, I haven't seen anythingike that anyway. What could I substitute it with? Maybe have the same vanilla flavour but just add food coloring?
I made this cake and used freeze dried strawberry powder and the same make of food colour but my lovely pink cake came out brown! Tasted of strawberry but was coffee coloured.😢

I am gonna make it this weekend for my birthday but instead of chocolade I am gonna use pistachio and ad some green food coloring along with vanilla and strawberry so you will get red white and green the colors of the Italian flag!

Is strawberry pwd the same as NESQUICK STRAWBERRY PWD or something else?? Any substitute incase if it is different because we don’t get it here…
Strawberry powder is made from freeze dried strawberries. It is pure strawberries that have been freeze dried so they’re crunchy and can be ground into powder. You can’t substitute anything else for it and get the same result. The only thing you could do is use a good quality strawberry flavor extract, but it’s not the same as freeze dried strawberries.

You’ll need to weigh your own batter and divide that weight by three. Yours may be different to mine if you have different sized eggs for example

Hmm… you could try dehydrating some strawberries in the oven. Or using extract/essence (although these sometimes have an artificial flavour)

What’s a good substitute for strawberry powder?
There really isn’t a good sub but you could try dehydrating your own strawberries to enhance their flavour but remove some of the liquid.

How do I scale down this recipe as I don't have that big a bundt tin and don't intend to buy one cz there's no one who could finish that much cake in my house?
You could just start with the eggs, decide how many you are going to use e.g. 3 eggs, then work out how many grams three-fifths of all the other ingredients would be (divide the grams by 5 and then multiply by 3).

I have that very bundt tin, and though I bake a lot and always prepare it meticulously, it's a 50/50 chance if the cake will release. Seeing all my Nordic Ware tins do this it's seriously turned me away from buying them.
It can be pretty scary turning out a Bundt cake, but the Nordic tins have never steered us wrong!

I find letting the Bundt cake cool in the tin for at least 15-20 minutes sometimes help with releasing the cake.
