Sidney, you did a good job on this butchering video. That sounds like good genetics to save. If the rooster gets picked on, it sounds like he is not an aggressive rooster. Aggression in a rooster has been my biggest issue. How may weeks did you give to these birds? I believe you said they were 2.5 to 3 pounds. Was I correct?
Yes we try to breed out all aggressive behavior from our chickens. Every two years we check the chickens attitude and behavior towards us and other chickens. We raised them for 16 weeks and they avg was 3.52lbs with a range from 2.80lbs to 3.94lbs after looking at the tracking.

Our local butcher won’t process chickens. Wish they could.
It is getting harder and harder to find processir that will not only do cattle, pork, and wild game.
