I went into Nemo and Friends SeaRider at Tokyo DisneySea with zero expectation, and was immediately charmed. This ride is basically a Finding Nemo fish simulator using similar technology to Star Tours. Though, with the added underwater lighting and screens along the side edges that extend the action, the overall sense of immersion in really excellent.
If you're a fan of either Finding Nemo or Star Tours (or BOTH), than you absolutely have to check out the Nemo and Friends SeaRider at Tokyo DisneySea!
"Boarding the SeaRider, a submersible that “shrinks” to the size of a fish, Guests will explore the wondrous world of marine life from the same point of view as Nemo and Dory. In addition to these characters, Guests have a chance to meet many of the other popular characters from Finding Dory including Destiny, the whale shark, and Hank, the octopus."

Yeah - I can see that. It's hard to capture just how well the motion simulator and lighting really sell the sense of immersion. The whole experience really is quite charming!
