Chewy Vegan Chocolate Chip Cookies
Makes 20 cookies
150g softened vegan butter
25g light corn syrup
1 tsp vanilla extract
1 tbsp plant-based milk (or 1 - 2 tbsp more depending on your flour)
150g coconut sugar
80g white sugar
3/4 tsp salt
325g all-purpose flour
1 tsp baking powder
1 tsp baking soda
150g dark chocolate, chopped
100g plant-based milk chocolate, chopped
Method:
1. Whisk vegan butter, light corn syrup, vanilla extract and plant-based milk until well combined.
2. Stir in coconut sugar, white sugar and salt.
3. Sift all-purpose flour, baking powder and baking soda. Stir with a spatula until the dough is damp, and most dry flour spots are gone.
4. Add in the chopped chocolate and combine well. If the dough is a bit dry, add extra plant-based milk, 1 tbsp at a time. The dough should be like wet sand and hold together when compressed.
5. Portion the dough into balls, 45g - 50g each. Then flatten and decorate with more chocolate chunks.
6. Refrigerate wrapped in cling wrap, or in an airtight container for at least 12 hours and up to 24 hours.
7. Preheat the oven to 180c or 356f. Arrange the cookies on a parchment-lined tray, spacing the cookies 2 inches apart. Bake for 12 - 14 minutes, rotating the entire tray halfway through.
8. The cookies will be soft from the oven; allow to cool for 10 minutes before transferring them to a wire rack to cool completely. Enjoy!
Note: If making cookies smaller than 45g, reduce the cooking time to 10 minutes. If making the cookies more than 50g, increase the cooking time to 14 - 16 minutes.
