It is truly a privilege to be able to take a glance into not only Mr Lau's master chef skills, but also see how he shows love to his family with food. It put me in tears when Mr Lau said "Grandpa will cook this again for Julian when he gets older." I started watching when Mr Lau first said "Hong doy, come down and have dinner", and it is honestly my favorite part of every video. It makes my heart so warm now that it is "Hong doy, mui mui, dai dai". Thank you for sharing with the world your beautiful family.
I love watching your dad. The amount of detail and care he takes in teaching us his amazing recipes. I understand Chinese and he is the sweetest human being. The translations don’t do justice to just how patient and sweet he is when he’s sharing his recipes.
i love cooking, and i love hearing Cantonese from Grandpa Lau. But the true indicator that this dish is authentically Cantonese? The sheer amount of oil he uses in the wok. Love it!
already tried the fried rice recipe, its devine!🤩 will definitely try this one as well!!!🤩 never knew we could blanch pineapple! very interesting suggestion!🤔😉 love this channel! so many recipes and flavours from my childhood! greatings from portugal!✨😉
I always thought the rice had to be old, cold and dried out. Interesting to see it can also be made with fresh rice. Sometimes I just don't want to wait!
Wow. Not too many people do it this way. It taste a lot better If you cook the protien and veggies separately. I find they have their own distinct flavours when you eat it. Very old school. Great video
If you know how to make it, can you make a video on Deep Fried Ghost please? Most of the other videos don't go into detail about how to get the dough to rise. Thanks.
As a Cook/Chef of 25 years, watching your Dad has helped me with Asian cooking. Along with Pai, ( Hot Thai Kitchen) they don't teach these techniques in Western Culinary Schools
Any chance your dad has a favourite black rice recipe? Just bought a ton of it (not literally, but only came in one size) for a recipe and looking for other good ideas too. I see it's popular in desserts as well.
Ordered pineapple fried rice once in Thailand. Had rice and pineapple. Must admit it was a tourist cafe near a railway station. Was the only place open late at night to get a meal. Once tried, never again.
Such a tempting recipe! This rice has to rock with any pork dish WOW I want to purchase the wok in your link (14 inches) and it suggests a wok ring (7¾-Inch and 9¾-Inch reversible size) Your dad seems to be using some sort of quare base on his stove (see 9:27) HELP please 🙂 Thank you so much for these videos! Your father is a legend
The several times that I ordered Thai pineapple fried rice it was obvious extra water was used to cook the rice. I thought is was suppose to be that way. I prefer freshly cooked rice when making this dish. My husband and I debate whether to loosen the rice or not. I'm going to show him this video!! 😂
Wouldn’t it be faster and easier to make fried rice using last night’s cooked cold rice ? This way, there is no need to wait for the rice 🍚 to cook. Making fried rice using just cooked rice would cause the freshly cooked rice to become sticky and get stuck to the WOK.
If you have leftover rice sure. If you don't, as long as you open the rice cooker and fluff the rice allowing it to steam out in the open, it shouldn't stick to the wok. Especially if the wok is seasoned properly and oil is added appropriately
I think it's important to mention most rice in the USA is fortified to improve its nutritional value. It has been rinsed and should not be rinsed again.
How do you keep your smoke detectors at bay with a smoking wok? I couldn't do it in the house I use to live in, and I definitely can't do it in an apartment (I swear apartment smoke detectors are more sensitive).
I would be careful giving kids LMNT. There is a real risk of hypernatrimia in children from the hydration packets because they have too much salt and are hyper palatable. I would consider consulting a pediatrician (and not the literature from LMNT themselves) and keep in mind this is a SUPPLEMENT not a beverage.
The canning process reduces the acid and destroys the enzyme, whuch is what the blanching of fresh was for. The enzyme is also why flavored gelatin mfrs tell you to not use fresh pineapple but canned in the gelatin. The enzyme reacts with the gelatin & keeps it from setting.
i've always been taught NOT to add cooked eggs back into the raw egg bowl as there is a chance of bacteria (from the raw eggs) may be present in the bowl and thus contaminate the cooked eggs.

As pizza connoisseurs are debating if pineapples belong on pizzas, Chinese chefs are like "sure, we will make it work if it makes you happy." 😂😅

I love watching you cook, Uncle Lau. You look very similar to my dad, and he is a good cook too. ❤
Love your dad! and thanks for another great video!!!
A place near me does a Malaysian fried rice that has mango and smoked salmon in it; very delicious!

It's always so heartwarming to see how Papa Lau teaches cooking 🍳
Pineapple on everything fried rice , to pizza I love it !!
When I cook rice for fried rice I like to put a pinch of salt and teaspoon of oil. Rice will be less sticky afterwards
Love this video, will make it for my granddaughter to try. Thanks again!!

Zojirushi (elephant logo) / Panasonic , Japanese brand rice cooker is always good quality
If you know how to make it, can you make a video on Deep Fried Ghost please? Most of the other videos don't go into detail about how to get the dough to rise. Thanks.

This channel its perfect
Awesome! Must try too make this recipe :)
Thanks! Going to make it this weekend!
What a canto classic!
I use frozen pineapple chunks. It doesn't have all the sugar syrup that the canned one does and it's super easy

I’m making this one for sure!!

Try again. That's not what I've had in Thailand or Thai restaurants in the US.
I've never had this. Haven't seen it offered at my local restaurants either. I hope to find some because it looks delicious.
Typical dish in any thai restaurant.. but thai style will be lot sweeter compare to cantonese style
@@alienck3901 I will look for it at the Thai restaurant near my house. I usually go to Chinese so now I know where to look. Thanks for the info.

I've been making fried rice for a while with oyster sauce. Do you think that would be a bit too much for this dish?
睇片都香!
Awww Dai Dai
I like using frozen pineapple..it's 'crisper' than canned.
can you cook the crab meat fried rice (more like vietnamese style)

nice!
It seems the only thing you can't teach us is those iron hands to hold a metal pot of rice as though it was cold.😁
what is the difference between light and dark soy sauce?
Light is saltier. Dark is more for the color of the dish, less salty.

Some people don't eat day old rice, like myself, so this method is more desirable.
I think it's important to mention most rice in the USA is fortified to improve its nutritional value. It has been rinsed and should not be rinsed again.
Specifically for fried rice you want to wash until the water is clear so the starch doesn't cause it to stick together or to the pan while frying
How do you keep your smoke detectors at bay with a smoking wok? I couldn't do it in the house I use to live in, and I definitely can't do it in an apartment (I swear apartment smoke detectors are more sensitive).
No smoke detectors in the kitchen, doors to kitchen completely shut, open windows especially skylight windows.
I think I bumped into you in piccadilly circus on Sunday
I have a colleague with the surname of Lau who was the chair of a local city commission. I called her "Chairman Lau".

5:22 I seriously doubt the need for an addition gram of sodium on top of an already high salt average American diet.
In the end no soy sauce added? 🤔

if you don't eat eggs unless they fully cooked then you should use a different bowl.
Doesn't seem to havd hurt these guys. If you have eggs that are fresh and from a reliable source, I don't see it as a problem.
I think that generally thigh meat is tastier while breast meat looks nicer...just my experience.
Fried rice without MSG is not complete...
first🎉
Woooooo
But bromelain has anti-cancer properties.
Uncle Roger please review. This will be funny
It would be like " teaching grandma how to suck eggs". This guy has been doing it for decades.
大哥請用公筷呀。
Nice recipe and tasty 😋 however pineapple 🍍 on 🍕 is completely 😑 wrong on all levels and should be banned!!!!!
Colin 🇬🇧
Randy, pls tell your dad that rice has arsenic and heavy metal and should wash it more and hopefully to get rid of it as much as possible.
🤔🤔🤔😅😅😅
wrong, wrong, wrong. worst fried rice video!!!
!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
People may not like pineapple on pizza,
but they won't dislike pineapple on fried rice.
