If you don’t make every piece wedge shaped, it’ll hold together better as it tapers out. Put a couple big square stones in each layer to help connect the opposite sides. Like in wall building, having some piece that go all the way across, or a bit diagonal to avoid the center post, would really help hold it together.

I wonder, could you make one that doubles as a wood burning oven/stove perhaps? Example, make it somewhat hollow and with a small air flow gap or hole at the bottom and the cap stone is removable revealing an opening to set a pot on. or something? Not sure how you'd go about the oven part... maybe a divided hollow? So the lower portion is a firebox and vents up the back wall and out the burner, but avoiding direct flame access to the upper hollow portion... and a little stone door to slide in a pan. Think that would work? I may just have to try. My dads family was all masons as far back as everyone knows, 10+ generations. He didn't teach us though because he afraid we'd break our backs and joints like had happened to him from overworking. Wish I had the skill though, not the job, but the skill.
Is it for something or is it art? Is that some kind of threat for the sheep? If they don't behave, the farmer will get rid of them all and switch to chickens? But I suppose it's tradition. Perhaps you could make a full Stonehenge next.
I suppose its all of those things. It's art if you want it to be, a technical exercise for us and a back scatcher for the sheep. If we can find big enough stones then a henge is definitely on the cards
