Good question and one that others have asked. We use and recommend pork or beef fat, with pork fat being the first choice. Some refer to pork fat as lard, but you really want to use pork shoulder, pork belly, beef tallow, etc. Typically an 80% - 20% mixture is preferred by most.
@@FishHuntNorthwest No I was refering Lard as lard. I just got some Pork Fat from the store. He was just going to throw it away. I guess during deer season he can sell it but this time of year no one wants it. So it was a good day for me. But I think lard is processed pord fat. Rendered.
