    Been working on this for a while and have started having success. My takeaways:
    - pan size matters, about 8.5 inches for 3 eggs
    - nonstick should be new or well maintained
    - high pan lip, as in the video
    - see how they tear the egg a bit? Don’t obsess over perfection, the omelette will form by the time you can roll it in the pan
    - if not confident in flipping, bump the pan just a few times then “cheat” with a rubber spatula and pull the seam towards you, rolling into the handle edge of the pan, hold it there for seconds (as in video) and the omelette is formed!

      Obviously if u knew wtf u were talking about this is only a video on how to make the omelette part, the flavor and seasoning comes within the rice that u put this omelete on and the sauce that u then pour over the omelette once it's silced open.

    Ever since I saw this video, I've been making these. First attempt led to scrambled eggs after overcooking. Second attempt was a success. My attempts since them have been successes with the messing up but that's okay! I've been making these once a week and my family absolutely loves them. If I wanna make something quick, I usually make this. It's so much fun despite the heat I keep exposing myself to (I'm heat sensitive) and it's delicious. Thank you for this video!

      I've tried making this dish a few times, I've been able to accomplish a successful flip but the eggs always turn out overdone and scrambled... I wish I could get it right!!!

    Hi. How do you flip the egg smoothly. How long do you scramble the egg for it not to break when you begin to form its shape at the edge of the pan.

      +Marcus Gulinao (TomhiPix) Hmm, I don't think you cannot do that, but I think it's hard. Especially, the part of heating the edge.

      Yeah, I noticed. It was going good until the part of heating the edge, then everything fell apart and became a normal omelette instead :'D But I think, with practice, I can flip the the omelette. So the "edge" will be heated by the bottom of the pan.

      +Marcus Gulinao (TomhiPix) Yes yes! I think so, too. If it is hard for you at the initial stage, you can use chopsticks to flip or turn over the omelette. Keep it up :D

    I was happy to know i flipped it
    But that happy moment lasted a second when i realise half the egg was gone
    It fell onto the metal thing beneath the pan and i gotta clean the whole thing.

      初めのうちは油多めで、よく熱したフライパンで少し固めに底面を焼いてからの方が巻きやすいですよ!最終的には練習あるのみです!

      We have a custom to eat raw egg in Japan.
      This is because eggs in Japan are strictly inspected for eating raw.
      Basically I can eat raw eggs safely.
      I don't know conditions in the other countries....sorry

      Eggs in Britain and the rest of the EU are kept at a cool room temperature but otherwise left alone between chicken and shelf. Eggs in America are washed with detergent, sanitised, and then have to be refrigerated because of the loss of the protective cuticle.
      I'd feel safe with any egg that wasn't bought out of a fridge, because it means that a clean egg came from a clean chicken. If I had a washed egg, I don't know what kind of mess might have been washed off. I believe that most US chickens are vaccinated against salmonella now (you can wash it off the egg, but not out of it), so that's better.
      If you live outside the EU or America, find out how eggs are handled in your country.

    I have a question. I have tried so many times. But the part when you try to tap i just cant get it right. Because everytime I flip one side and it kinda become really flat. And it wont flip over cuz its too flat. Is my pan too big? or Do i need add more egg?

      Martin Zhou Try to have a pan big enough and when cooking the first stage of the egg, leave it half raw, so when you flip the egg, the egg stacks on itself nicely (2cm) if it's still too flat, try to roll the egg back and forth like how he does after flipping

    I've eaten so many eggs trying to do this. It was close but no cigar. 😂 I'll try again sometime and use a newer non-stick pan.

    理想のオムレツです!トントンの際、序盤はひっくり返るのですが途中からひっくり返らず端っこが跳ねるだけ、もしくは途中からは右端だけしかひっくり返らずねじれたオムレツになってしまいます。卵がフライパンに引っ付いているわけではないのですが・・・green honeさんはこのようなことありませんか?

      omuo 久しぶりに作るとあります!笑
      原因として考えられるのは(1)フライパンの温度が高すぎ低すぎた。(2)火が入りすぎてフライパンと触れている部分が成形されてしまった。(3)フライパンの表面加工が剥がれてきた。あたりかなーと思います。初心者にとって(3)は結構重要な要素だったりするんですよね。なかなか絶妙な感覚ですから(・・;)

      green hone 返信していただきありがとうございます。フライパンの温度はとても難しいですよね。動画にある「卵液がふわっとなる温度」を目指します。テフロンのフライパンだと塗装が剥がれる影響も考えないといけないんですね。プロの動画は鉄のフライパンばかりなのでgreen honeさんの動画はとても勉強になります。トントンを始めたら菜箸を使わずに継ぎ目を下に移動させているのも参考になります!ありがとうございます!
