My takeaways: - pan size matters, about 8.5 inches for 3 eggs - nonstick should be new or well maintained - high pan lip, as in the video - see how they tear the egg a bit? Don’t obsess over perfection, the omelette will form by the time you can roll it in the pan - if not confident in flipping, bump the pan just a few times then “cheat” with a rubber spatula and pull the seam towards you, rolling into the handle edge of the pan, hold it there for seconds (as in video) and the omelette is formed!

Yeah, I noticed. It was going good until the part of heating the edge, then everything fell apart and became a normal omelette instead :'D But I think, with practice, I can flip the the omelette. So the "edge" will be heated by the bottom of the pan.

We have a custom to eat raw egg in Japan. This is because eggs in Japan are strictly inspected for eating raw. Basically I can eat raw eggs safely. I don't know conditions in the other countries....sorry
Eggs in Britain and the rest of the EU are kept at a cool room temperature but otherwise left alone between chicken and shelf. Eggs in America are washed with detergent, sanitised, and then have to be refrigerated because of the loss of the protective cuticle. I'd feel safe with any egg that wasn't bought out of a fridge, because it means that a clean egg came from a clean chicken. If I had a washed egg, I don't know what kind of mess might have been washed off. I believe that most US chickens are vaccinated against salmonella now (you can wash it off the egg, but not out of it), so that's better. If you live outside the EU or America, find out how eggs are handled in your country.

Martin Zhou Try to have a pan big enough and when cooking the first stage of the egg, leave it half raw, so when you flip the egg, the egg stacks on itself nicely (2cm) if it's still too flat, try to roll the egg back and forth like how he does after flipping

理想のオムレツです!トントンの際、序盤はひっくり返るのですが途中からひっくり返らず端っこが跳ねるだけ、もしくは途中からは右端だけしかひっくり返らずねじれたオムレツになってしまいます。卵がフライパンに引っ付いているわけではないのですが・・・green honeさんはこのようなことありませんか?

原因として考えられるのは(1)フライパンの温度が高すぎ低すぎた。(2)火が入りすぎてフライパンと触れている部分が成形されてしまった。(3)フライパンの表面加工が剥がれてきた。あたりかなーと思います。初心者にとって(3)は結構重要な要素だったりするんですよね。なかなか絶妙な感覚ですから(・・;)
