      Do you think you'd get better (or more interesting) results on your homemade if you put the citrus in first and then putting in the horehound, dry herbs, and demerara to make a psuedo-oleo saccharum? Then mix in your booze the next day or a week later?

    Fun fact you probably already knew: Leading up to, during, and possibly for a time after the Prohibition, due to how alcohol was seen by a lot of people (especially by the temperance movement) getting cocktails prescribed as medicine was a way for someone to get a drink without stigma. Also, two bonus fun facts, lemonade was actually seen as the main drink of the temperance movement because they used it as an "indulgence" drink instead of alcohol, and during the prohibition many places would sell powdered grape concentrate bricks that would be labelled with the instructions "After mixing with water, do not place the liquid in a jug away in the cupboard for twenty days, because then the juice will turn into wine." There were also ones that would tell people to either add benzoate of soda to avoid fermentation, or avoid the use of "yeast, raisins, etc., otherwise fermentation sets in." Fun ways to get around the Prohibition.

    Not even kidding. My pediatrician told my mom to make cough syrup using honey, lemon and whisky. That was in the 70s. It works, too. Lemon breaks up the congestion, honey soothes the throat and the whisky helps relieve the pain and relaxes the kid.
    And before anyone says anything, that was before the link between honey and Reye syndrome, and I was over 2.
    So, yeah I've been drinking cocktails since I was about 3 or 4.

      FYI, you're mixing up two different "not safe to give to kids" issues:
      1) Honey in children under 1 year of age can lead to botulism because their stomach acid isn't strong enough yet to deactivate botulism spores that may be present in honey
      2) Reye syndrome can affect children and adolescents; it's usually triggered by taking aspirin (or other salicylates) when recovering from a viral infection, frequently influenza or chicken pox.

      lemon aint gonna "break" congestion.
      ...maybe if you add salt and shoot it up your nose. this will flow into and through your sinus, probably causing some pain cos acid, and it may shock your system enough to change modes of mucous production.
      how does honey soothe anything? it's sweet n bitey and the chemicals n stuff dont do anything in the amounts we eat.
      ...if you eat a whole jar quickly it might slightly alter your gut flora.

    15:05 For the viewers at home: a 750 ml bottle is also known as a "fifth." As in, it's 1/5 of a gallon. So for all practical purposes it's the same ratio in the recipes.

    • @georgeparkins777
      @georgeparkins777 2 роки тому +5

      It's a little less than a true fifth of a gallon, but it's close enough, compared to some of the other US standard liquor bottles.
      A 375ml "pint bottle" is 12.5 oz while a real imperial pint is 16oz. A "handle," which we call "half-gallons" in the trade, is 1750ml (1.75 liters), (coincidentally a liter plus a metric "fifth") while a real half gallon is almost two and a quarter liters. All of our liquor bottles sound like they're bigger than they are, except half pints, which are bigger than half of a "pint" of liquor!

    • @georgeparkins777
      @georgeparkins777 2 роки тому +1

      I'm an idiot. An American pint is 16oz (US fluid oz), while an Imperial pint is 20oz (Imp. fluid oz.) or 19.2 (US fl. oz.). I was using Imperial as shorthand for conventional units.

    In her youth (late 1970s into the 80s), my mother would do shots of Rock 'n' Rye (along with Hot Damn) in bars. You mention PA keeping the tradition going, and this was in Baltimore, so not far away. In my early 20s, we were down the shore, and I had a bottle of whiskey. My mother poured some to taste it, didn't like it, and took some rock candy we had bought earlier in the day and let it dissolve for a few minutes in the whiskey before drinking it. That's always been my recipe for Rock 'n' Rye: just throw rock candy into whiskey.
    In my 20s, I would take a bottle of cheap rye (Jim Beam or something) an add 3-4 sticks of rock candy (preferring orange flavored or plain, maybe cherry flavored for just one of the sticks) and put it all in a swing top bottle with a wide mouth. Then I'd take the mixture to parties and people would sip on the sweet whiskey. I never did the whole fruit or herbal stuff: just rock candy and whiskey. And it's pretty decent and way less work than mixing cocktails for people, but nothing too exciting.

    You know Greg used to play D&D, because only someone that was into fantasy tabletop role playing games (TTRPG) as a kid would spend more than 30 seconds riffing on "Horehound". And, yes, I snickered at the mane. In my defense, I'm almost 50 and still playing D*D.

    I fell in love with Hochstadter's Rock & Rye many years ago and it helped to push me towards cocktails. My best Rock & Rye memory was asking my mom to find some in her rural area, but when I arrived I found she had bought Jacquin's Rock & Rye, and I can attest to it's barely digestible nature.

    A funny note about that brand of horehound hard candy, when I worked at Walmart they shipped the bulk candy in small wooden barrels and when they tried to open it my one manager had to borrow a hammer from the hardware department to bust it open to put the candy on the display. Then they sold the empty barrels in the break room. It was probably the most fun I’ve ever had with a new product

    Horehound is an old fashioned hard candy which often was used as a cough drop. I used to work at Shane’s Confectionery, the oldest continuously running candy store in the nation. You’re right, it is sweet, but has does have some herbal notes. The plant has some medicinal benefits, if you are seeking that.

    What I like about Greg is even though he's been at this a long time and has a more elevated palate (and obsession with Tiki) is that he is still so chill and laid back about mixology. There's no hard set rule, it's more art than science. As a non-drinker, it's fun just to watch him experiment like some mad scientist throwing chemicals together to create an elixir of import.

    Hochstadter's Rock & Rye is dope! Created by guy behind St Germain. 2 suggestions:
    1) My favorite: brew up your favorite cup of tea, throw it in; perfect instant (and damn tasty) hot toddy. Great for when you have a cold (or want to pretend that you do), particularly with caffine-less herbal teas
    2) It is great to throw in some seltzer or soda water and ice for a lighter (& great) long drink (full disclosure: I find the native rock & rye too sweet for my preference, though they do sometimes release a higher proof, longer aged version that is REAL FUN)

    No rock and rye. But in Eastern Europe, we have many interesting medicinal alcohols. Brandies are a cold staple(at least they were in my family), and in the Baltics you'll find different types of herbs mixed together into an alcohol cordial to treat different ailments.

    I've worked with horehound in addition to having had those drops and horehound candy sticks. Horehound, when highly concentrated as a flavor, has a lot in common with like a hybridization of yerba mate, tamarind (but not in any way sour), and the slightest hint of licorice root (the real stuff...not the candy...the bitter, earthy stuff). That said, it is rather mild. It probably does contribute to the flavor in a small way, but cinnamon and citrus both kind of kick it to a pulp in the strength department. I would suggest that you should get your hands on some pure horehound and make your own liqueur or plain infusion. Horehound does work dry, but it is a bit better sweet. An herb that goes well with it, but that I would be careful with because of its pharmacological effects, is linden (linden causes your core body temperature to drop...so be careful). Another herb that goes with it, but doesn't really do anything from a drug perspective, is tarragon (combining these two can produce a sort of savory and minty marshmallow-esque thing...very interesting). Horehound has some small impact on blood sugar, in that it very slightly lowers it...so maybe avoid it if you are hypoglycemic, but most people should be fine with it. The final thing I will say on this is that horehound goes well with chamomile as well, and since chamomile is a good pairing with bourbon and honey, a mix of the three should be delicious (I haven't tried this particular mix myself as I was unaware of how good the bourbon chamomile flavor pairing was until about 2 years ago and I haven't really had any horehound for about 3 years due to a combination of factors related to money, covid, and lack of space during a move for uncommon herbs and spices).

    This somehow reminds me of the old finnish tradition of preparing a saturated solution of salty salammoniac-licorice hard candy in Vodka. It´s called "Salmikakki", you can get it bottled, but the homemade stuff is better. Less sweet, more salty-spicy. It´s good, but it has 42.5% Vol. that you don´t notice, so, go slow...
    I also get that Rock&Rye, because as a kid in southern germany, we would chop onions, and put them in a jar with rock candy, and leave it over night. The sugar pulls the juice out of the onion and forms a kind od sirup, that we would get in spoonfuls as cough sirup. And it actually works. Horseraddish and thyme is optional. So i can totally see how adding Rye would make it the adult version.

    Maybe instead of the horehound candy, just use some horehound tea bags? BTW, if your hibiscus doesn’t taste like much, your not using enough, the petals are less intense than a tea leaf or spice. For a half gallon of tea, use a half cup to a cup. It should have a sort of raspberry taste. Lime helps it come out further.
