The alifu looks really good. And I’m glad you showed us what a yam looks like because in America, we tend to think a yam, and a sweet potato are the same thing but seeing you with that yam let’s me know they are two different tubers. 😃 I think it’s cool that you wanted to open up your own restaurant and had menus crafted. I suggest holding on to them to use in your meal planning. And when you’re ready to open up your property for tourism, you can use those menus to prepare meals for guests. And it’s cool you want to expand beyond the original pescatarian menu, you may want to keep pork out of menu. I’ve noticed Ghana has a Muslim population and from what I’ve seen in Dubai, they keep the pork separate from everything else (the Starbucks there was the first & only Starbucks I’ve been to that only has turkey sausage and bacon) because in islam pork is haram. So it’s possible serving pork would be an additional hassle because you will have to make sure that the pork doesn’t cross contaminate the other foods if you have Muslim visitors or people who don’t eat pork. But from what I’ve seen from your menu, the food items look great.
