The key to stable footage without a gimbal walk slowly, always go two handed, with mirrorless camera holding the lens helps I think. I managed to get gimbal like footage with a smartphone. panning slowly, walking slowly, moving camera while holding it in with two hands instead of walking. But I've seen there are some videos on UA-cam showing these techniques. I have a Sony A7 IV now so it has IBIS, so that will help some I guess. But if you need to run, walk on rough terrain you need a gimbal, but for slow gentle filming you don't need it at least not for short time, might come in handy once you get fatigued.
I think that mostly it depends on the necessity and style you are going for. Sure you can still make smooth shots with out a gimbal, but it still is required to create certain things. Unless you use Sony A7SIII that can be stabilized in post using Sony's Catalyst Browse software. :) But even then there are some nuances.
