    Here's a simple recipe to make crushed green chili achaar (pickle):
    Ingredients:
    250 grams green chilies (preferably thick and long)
    1 tablespoon mustard seeds
    1 tablespoon fennel seeds (saunf)
    1 teaspoon fenugreek seeds (methi)
    1 tablespoon turmeric powder
    1 tablespoon red chili powder (optional, for extra heat)
    1 tablespoon carrom seeds (ajwaen)
    1/2 cup mustard oil (or your preferred oil)
    3 tablespoons vinegar (optional, for tanginess)
    Salt to taste
    Instructions:
    1. Preparation of Green Chilies:
    Wash the green chilies thoroughly and pat them dry. Ensure they are completely dry, as moisture can spoil the pickle.
    Cut the green chilies into 2-3 inch pieces, or crush them roughly in a mortar and pestle for a more rustic texture.
    2. Dry Roasting the Seeds:
    In a pan, dry roast mustard seeds, fennel seeds, and fenugreek seeds on low heat until they release their aroma.
    Let them cool and grind them coarsely.
    3. Preparing the Pickle:
    Heat the mustard oil in a pan until it reaches smoking point, then allow it to cool
    Now, add the crushed green chilies and stir them in the oil for 2-3 minutes.
    Add turmeric powder, red chili powder (if using), and salt. Stir everything to coat the chilies well with the spices.
    Add the coarsely ground mustard, fennel, and fenugreek seeds to the pan and mix well.
    4. Finishing Touch:
    Add vinegar (optional) and lemon juice for added tanginess.
    Let the achaar cool completely before transferring it to an airtight glass jar.
    5. Storage:
    Store the green chili achaar in a cool, dry place for at least 2-3 days to let the flavors develop.
    The pickle can be stored for a few weeks in the refrigerator.
