स्टफ्ड कश्मीरी दम आलू न प्याज, न लहसुन, न टमाटर | Stuffed Kashmiri Dum Aloo

    Ingredients:-
    * Potato (आलू) - 6 pieces
    * Tandoori Color (तंदूरी कलर) - some
    * Oil (तेल) - for frying
    For Filling:-
    * Mawa (खोया/मावा) - 100 grams
    * Green chili (हरी मिर्च)
    * Mint leaves (पुदीने की पत्ती)
    * Black pepper (काली मिर्च)
    * Cardamom powder (इलायची पाउडर)
    * Salt (नमक)
    * Sugar powder (चीनी पाउडर) - less 1/2 tsp
    * Chat masala (चाट मसाला)
    For Paste:-
    * Curd (दही) - 1 cup/125 grams
    * Kashmiri Red Chili (कश्मीरी लाल मिर्च) - 1 tsp
    * Coriander powder (धनिया पाउडर) - 1 tsp
    * Turmeric powder (हल्दी पाउडर) - 1/4 tsp
    * Black Salt (काला नमक) - 1/4 tsp
    * Chili powder (लाल मिर्च पाउडर)
    * Fennel seed (सौफ) - 1/2 tsp
    * Dried fenugreek leaves/Kasuri methi (कसूरी मेथी) - 1 tsp
    * Ginger powder (अदरक पाउडर) - 1/4 tsp
    * Black pepper (काली मिर्च)
    For Gravy:-
    * Ghee (घी) - 2 tbsp
    * Cumin seeds (जीरा) - 1/2 tsp
    * Green cardamom (हरी इलायची) - 1 piece
    * Cloves (लौंग) - 2 pieces
    * Cinnamon stick (दाल चीनी) - 1 small stick
    * Asafoetida (हींग) - 1 pinch
    * Green chili (हरी मिर्च)
    * Ginger (अदरक)
    * Turmeric powder (हल्दी पाउडर)
    * Kashmiri Red Chili powder (कश्मीरी लाल मिर्च पाउडर)
    * Mawa (मावा)
    * Coriander powder (धनिया पाउडर) - 1 tsp
    * Salt (नमक) - as per taste
    * Sugar (चीनी) - 1/2 tsp
    * Water (पानी) - 2.5 serving spoons
    * Coriander leaves (धनिया पत्ती) - for garnishing
    * Cottage cheese grated (पनीर) - optional
    RECIPE:
    Peel some Potatoes and cut them in two parts and with the help of scooper, make some space to fill the filling in it.
    Put the potato pieces in water and then take out the Potatoes in a bowl, put some Orange Food Colour by adding water in it and then wash the Potatoes again and fry them on medium flame.
    For the filling, take some grated Mawa, Green Chilies, chopped Mint Leaves, Black Pepper Powder, Cardamom Powder, Salt, Powdered Sugar and Chat Masala.
    Mix them all and fill it in the Potatoes and keep it aside.
    Then take some Curd in a bowl, put Kashmiri Red Chili Powder, Coriander Powder, Turmeric Powder, Black Salt, Red Chili Powder, grinded Fennel Seeds, Dried Fenugreek Leaves, Ginger Powder, Black Pepper Powder and mix it well.
    Put some Ghee in a Pressure Cooker, then put Cumin Seeds, Cardamom, Cloves, Cinnamon Stick, Asafoetida, Green Chilies and grated Ginger.
    After cooking them for a while, turn the flame slow and put Turmeric Powder, Kashmiri Red Chili Powder and the Curd mixture in it.
    Put some Water, Mawa, Coriander Powder, Salt and Sugar in the gravy.
    When the gravy gets cooked and releases Oil, put some more water and then put the filled Potatoes in it and give it a whistle.
    Then turn off the flame and let the pressure to be released.
    After the pressure gets released, check it and then garnish it with some Coriander Leaves and grated Cottage Cheese.
    In this way, Kashmiri Dum Aloo recipe will be ready to serve.
