  • In part 2 of our "we bought a smoker" series, we go over the initial seasoning process or "burn in." Seasoning anything that is cast iron is a must when first purchased, as without this process, you leave your cookware susceptible to rust and corrosion.

    I like it man good job setting it up and seasoning it! I actually just picked up an old country barbecue pits wrangler this weekend and I did some similar modifications. I’ll be on the lookout for your first cook 👨‍🍳

      Thanks! Not sure if you saw the modifications video, but I definitely think that sealing it before playing with it a bit first may have screwed me up. It looks like it may not have needed it in spots. But hey, we are learning! Cooking video will be up today!

    If this helps. Had wsm. Leaked pretty bad. Cooked pork belly. Leaks cleared up a bunch. Sometimes they seal themselves as you get a few cooks under your belt. Just ordered an offset. Best luck to you👍

    I think the better thing to do is do an initial pretty hot burn to burn all that factory grease off. When the grill is warm pit your silicone/seal tape on. Then after that season it. Usually don’t put the seal on until you know where it’s leaking from as well.

      I think I mentioned that I regret putting the modifications on prior to doing the initial burn in.

    I have seen 'clamp' mods that forces the door tighter for a better seal. You can look into that and think about it for sometime in the future.

      I'm definitely going to look into those. I did sand some of the gasket and silicone down which seemed to help. It's not perfect, but it works. My main concern will be losing heat in the winter, so if it gets bad, I will be getting those clamps.

    Hey Fatty (I mean that in the most endearing way), did you have any challenges installing the temperature gauge for the Brazos?
    I went to install mine this morning in order to season it and it's getting stuck about halfway on and I don't want to damage it by "muscling" it to screw it on. This pretty disappointing but I'll figure out a way. I'm using the red, white, and blue gauge that Old Country sells so it's surprising that it doesn't fit properly.

      If it's the same one as mine, which I believe it is, it can be sort of a pain. I had to use a bit of muscle but I wouldn't say mine got completely stuck to the point I was afraid of breaking it. Just be sure not to twist everything so much that the needle doesn't match the reading anymore.
