I really like how Kaijuu no 8 shows two major reasons why they still use conventional weapons while the AntinKaiju squard gets into place. It wears down the Kaijuu's energy in minor ways by forcing them to regenerate from minor wounds, even if that only takes seconds. Second, it lefts them fire for effectz and lure the Kaijuu into kill boxes with weapons that have well known damage output, allowing them to distract / lead Kaijuu without doing unexpected damage to the city.
A Giant Mushroom Kaiju, Hhhhhhhmmmmmmmm........reminds me of a very underrated horror film by Toho called Matango, where a group of people end up stranded on an island plagued by a killer fungus.
