Thank you!!! This is a wonderful tutorial! I love the simplicity of your ingredients, along with the detailed explanation. I just went blueberry picking so I am going to start your recipe as soon as I am done here. There are many canning videos out there, however, yours answered the simple questions, example: you mentioned with water canning it doesn't matter how many jars you have in the pot. I have always wondered that. I suppose it's one of those things that canners just know, however, I am very new to canning (both types) so I loved the way you explained each step and the tools you used. It's like having you as a friend in my kitchen teaching me. My husband and I are terrible gardeners. I'm looking forward to watching your gardening videos next to see if there is something you mention that we are doing wrong. We also have about 5 fruit trees that we never get fruit on them. We followed the pollination instructions as far as having another variety if needed. We must be slow learners. lol Have a blessed day my new friend :)

Wanda because of the thick skin on blueberries and grapes you need to poke a hole in the blueberry before freeze drying and cut the grapes in half. The thicker skin does not allow a way for the ice to escape when freeze drying.

This is what I've been doing. I don't use pectin because I can't obtain organic pectin. I did make some home-made pectin from organic apple bits, but I don't need to use it if I'm "boiling down" to create the desired thickness of my final project.
Also, I use organic sugar because pretty much everything else is genetically modified, last I read. That way I reduced my sugar intake as well.
I used my home-made pectin for plum jelly and it turned out beautifully.

Ms Wanda, You need a PORTABLE ISLAND (on wheels w/lock in ability) in that Canning Kitchen of yours and I/WE all know Danny can build it for you. Extra Countertop space especially when you've got 2 or more projects going on at the same time (which is just about every time we are Preserving foods for long term). I have used a dollop of butter to rid the foamy after boiling it does work and either you don't taste it at all or it just adds a bit more downhome flavor.

You are a bit of a rebel canner arent you? LOL. Most wouldn't use their own lemon juice because you can't be assured the acidity is the % you need. And using regular corn starch is canning most don't recommend because it breaks down in heat, that's why you use clear gel. It's a modified corn starch made to withstand heat and not break down.
I like that you tell people if it doesn't set up, you have syrup! I had a very happy accident once making a caramel apple jelly that didn't set. It made the very best syrup I've ever had! I'm hoping to duplicate it this years apple season as I made it from the peels and cores!

@@CrazyDazes You know what they say about great minds, right?? 🤣🤣
I love your videos & everything that goes along with you & Danny. Keep up the good work... you inspire me & exhaust me... sometimes in the same video!
If you get a chance... could you take a quick look at the HOMESTEAD HEART channel? She put out a video about her melon patch today & my heart just broke for her. Her husband was in a really bad wreck pretty recently & is going to be quite a while recovering so this lady is taking up all the slack while her husband recovers. They are just the sweetest people. In fact, if you're not familiar with them, when lots of us were having trouble finding pressure canners... these 2 people were out buying pressure canners for their viewers to buy from/thru them.... WHO DOES THAT?? (They do.) So when today's video came out, the 1st thing I thought of was you guys talking about Grazon. I suggested she look at your channel about it before she was done with her video & when I went back to watch the rest... she was talking about you guys!! Small world, right? But I'm so fond of these hard working, decent people I was hoping you could help her get rid of the bad mulch properly, etc so this is a 1 time deal for her. Thanks Miss Wanda. Stay well... I'll be watching! GOD BLESS YOU & DANNY.🙏🙏🙏🙏🙏🙏🙏
