    Today's weekday vlog I'm sharing with you what I eat in a day. Healthy cooking, breakfast, lunch and dinner ideas.
    Mojito Lime Chicken Salad
    Ingredients:
    Romain Lettuce
    Chicken breast
    Mojito Lime Marinade packets ( OR Cilantro Lime seasoning works to)
    Limes and lime juice
    Cilantro
    Tomatoes, chopped
    onions, diced
    1 can Fiesta Black beans ( any black beans is ok) drained and rinsed
    avocados
    Red Wine Vinegar 2 tbsp
    Oil 2 tsp
    minced garlic 1 tbsp
    Directions:
    Mix up the marinade according to seasoning packet. If using a cilantro lime seasoning, measure out 1oz of seasoning into a bowl, add in 2tbsp water, 2tbsp apple cider vinegar and 1/4 cup of oil and marinade for at least 30mins or more.
    Meanwhile, make the black bean salsa. In a bowl mix the chopped tomatoes, onions, cilantro, black beans, 2 tsp red wine vinegar, oil, garlic & juice form 1 lime. Mix well and refrigerate until ready to use.
    Dice up avocado
    Set your oven to broil. Lay chicken on a cookie sheet lined with tin foil. If you have a cooling rack that can go in the oven, place rack in the cookie sheet. This helps chicken not become so mushy or oily on the cookie sheet. Bake in oven for 15mins. OR You can cook on the stove top til chicken is no longer pink.
    To assemble the salad. Bed of lettuce, chicken, black bean salsa, avocado, squeeze lime juice over salad.
    DRESSING: Mix some ranch dressing with about 1 tablespoon of the seasoning mix and a teaspoon of lime juice. Adjust to taste. mix well
