I always start with medium speed, then tune low to add sugar gradually, then medium speed again until soft peak form, then change to low speed, as it will stabilize your egg white more

Wow, thanks, hope to see your photo. Oh just take all the ingredients x1.5 times respectively. The baking time might vary depends on the size and the depth of your cake. The bigger and deeper the cake is, the longer it takes

Ok to use cake flour 190g, so no need to put flour n cornstarch already. U can try with coconut oil but might have different flavor. Best not to use butter, coz diff texture

@@iwen777 I experienced same things before, when it's too dense ( not moist), the cake can last the most 2 days, and in fact the second day the taste has almost gone, so it's actually wasted food. so maybe should adjust the moist content better, so at least can last 3-4 days like normal cake

Hi Iwen, my oven doesn’t have the option to switch off the fan mode , is there any other method? Tks in advance
For fan oven, can try to reduce oven temperature by 10c, as fan oven tends to dark too fast

If no pandan leaves can use pandan essence. Hw much do I put. Need add water to it
I haven't tried that before. Coz I often use fresh pandan. U can adjust accordingly, from 1/2tsp onwards

请问我做的戚风蛋糕倒扣是自己出来了,然后我再翻回进模具,8寸的模具,蛋糕小了一点,(直径如果是20cm,那么蛋糕大约变成19cm), 我把蛋糕压下去,也可以弹回一样的高度(大约5.5cm) 弹性十足,那么是失败还是成功?
蛋糕整体是缩小但又不缩腰(我在网络看缩腰的版本是缩一边但另一边没缩),因为整体缩得很平均🤣 有弹性算是成功?
@@maggietmy89 蛋糕会自动出来多数是因为烤盘不是很大,面糊过多,所以里面中间还烤不够,所以容易滑出来。下次可以不放到那么满噢。蛋糕倒扣的话会更加高,更加蓬松噢。
不过这蛋糕很湿润,所以无法倒扣依然很蓬松噢。哈哈。加油o

其实最好用松底磨具,因为需要倒立不能放烘烤纸的,不然蛋糕不能粘在磨具上。

at 9.12 can see that the middle hallow part is not completely cooked ( the dark green area ), it's too dense, not moist
Yaya slightly on the dense side, can bake longer actually, as im using slightly smaller bundt pan thus the batter is deeper
