    First, I think your videos are great and I really appreciate all the information I get from them.
    I’m sure this is an awesome piece of equipment. For someone like you or someone who bakes bread daily I can see it, but I doubt the average home cook needs a $2000 mixer.

      @@facenameple4604 I’m aware but she does more than just tell us how it grows she tells us about the farmers, the soil composition, climate and areas the plants grown in, the distribution practices, we get to see how it looks unripened and how the field workers collect the fruit, a lot more content than just telling us it comes from a cactus

    Is this the high hydration version of the mixer? Can you tell what speeds you use for different types of doughs? I am trying to make up my mind between the regular speed and the high hydration version with higher speeds. Thank you

    I like to eat sourdough with creamy cilantro sauce (roasted shishito, Gypsy, bell, chipotle, bullhorn, mayo, culantro or ngo gai, pokey joe cilantro, Chinese chives, green onions, lime, Meyer lemon, agave). Grilled cheeses are so good

    Hmmm… such a huge machine and not so versatile i think. Can i attach other tools than that spiral? For Ryebread i would need a k-hook or similar because it is more a mixing than kneading with rye.

    Certainly a good machine, but keep in mind that it's 35Kg or so. Quite a pain to get it in and out the shelf. It needs a constant place to put.

      Ya. For a mixer, the heavier, the better. Those planetary mixer like KA, at speed you may even need to hold it down to keep it from jumping out of your countertop 😅

    Have you ever used an Ankarsrum mixer? I know PHG sells those too, I’d love to see one used in a sourdough demo. At about 1/3 the price of a famag I might actually buy one 😂

    I hope this channel isn’t turning into just advertisements. I noticed this is the 2nd video in a row that’s trying to sell us a product and I don’t recall you doing that before. I know you have to make money to support the channel but maybe space out the advertisement videos a bit?
    Anyway, I love your usual content and look forward to more of it.

      Thanks for the feedback! It's not always as easy as that. We have lots of videos (like How Does it Grows?) that take months to pre-produce, film and edit as well as more time sensitive stuff (like gardening topics) - so the timing isn't always in our control. That said, I hope people who are actually in the market for a mixer do find this one useful.

    👀 I’m super tempted by the spiral mixer. How do you keep so fit while eating that much bread?

      It's such a great machine! I think I eat a pretty normal amount of bread -- one to two slices a day. My whole philosophy of eating is to eat as many non-processed, homemade foods as possible, but I'm not crazy restrictive about it. I feel good about eating bread that's full of freshly ground, whole grain. Once a week, I bake all the bread my family will eat in a week -- I slice it and put it in the freezer. I haven't bought packaged bread from the grocery store in probably a year and a half! Hard to go back to flavorless bread. ;)

      The best way to stay fit is skip the butter! Great fresh bread should not need it, or choose a healthier spread like hummus.

    Hey Nic, can you tell me if the mixer's safety guard would be able to raise if there is a 12" overhead cabinet above my 24" counters? I want to order the IM-8 Fixed Head from PHG, but don't know if I will be able to operate it on the counter. Can't find any pix online of it sitting or in use in a kitchen. Thanks!

      100% won't work. thats not enough clearance. If you tilt it you need 23.5" diagonal clearance for that IM-8S.

    Nice. I never have had good sucess with oven spring. I have baked, i dunno, 100 sourdough but only 2 times got that ear everybody is talking about. My bread taste nice and rises in the oven, but my scoring "stays flat" Hard to describe what i mean. Look at a Miche Poilane! Their P scoring is also flat and reminds om my scoring, so i dont mind. If Poilane have the same kind of scoring as my, i dont complain. My bread taste great, (most of them) I am just curious why i dont get that ear? Do you have any suggestions?

      Try scoring a little off center and using a shallow cut that is an angle of 35 to 45%. As far as oven spring goes, if your dough is overfermented you will get a flatter loaf with a denser crumb. It could also be that your dough is not strong enough to hold itself up. Try adding a couple coil folds until the dough maintains its shape for about 30 mins without going completely flat. Check your shaping. It should be taught but if you tighten it too much you will squeeze the crumb and again get a denser loaf.

      @@mrs.debrie4049I suppose. But this would not work for me because I like to make 100% Rye Breads, which one does not make with any sort of dough hook, so unless it is doable with this machine, it would be out.

      I have an Ankarsrum and it's rubbish if you aim for a high gluten development. It's probably OK for Rye Bread and other Scandinavian recipes.

      Just Google Spiral Mixers and you will see that you can get them a lot cheaper than that. Also, they all do the same thing, mix dough to perfection very fast. If you know how to make bread, you'll be able to work with them

      @@TrueFoodTV totally understand. that said, there are other options. Patreon being one. at almost a half mil subscribers, the channel is well into monetization. I guess what im saying is having seen so much great content come from this channel, i hope yall will balance the sales pitches. The adverse effect of making more product placement videos is having more people find the content LESS valuable. Making less but very high value content will always go over better.

      It depends on how much you're mixing. I do do some folds afterwards, because I prefer to feel the bread with my hands to know how it's doing.

    You lost me at the word "sensor". I can only imagine how costly this is to replace or have repaired... and the machine stops if the sensor is dirty. No thanks. I use a small $250 on sale Cuisinart and bread looks just as good.
