Does rolling them like that just lose some of the meat though? I feel like there is a more efficient way to clean them so you get all of the meat, there isnt much there to begin with so I imagine just peeling them maybe would be more effective but time consuming? Can you eat Crayfish as well from say North West Ohio? Down south in Louisianna crawfish boils were my favorite man a cold Bud Light and some crawfish is a magical thing man.

It's pretty good but he seems to have over cooked the crawfish a lot, normally you only get the oil hot, put the garlic dice in big parts, some chilies (cayenas are the tipical ones used), wait for the garlic to get golden and put the shrimp, cook about a minute and serve sizzling hot.

I fish with literally a chicken leg on a string and a hand net. Use a knife to shred the chicken leg so they can hold onto it, let it sit on the bottom for just a few minutes, and slowly bring it up to the surface. Crayfish won't usually let go until they absolutely have to, so you'll have 2-8 Crayfish each time you pull it up, then you just slowly put the net under it and pull it all out.

I've been "backing" crabs for 38 years, but used to cook them whole. I noticed a distinct difference in flavor. I applied it to crayfish and got same results. Better flavor if no guts.
