I used that Wake Up Call hot sauce as a marinade on a pork tenderloin. It was fantastic. A little sneaky heat at the end, but not too bad. My 2 year old ate it up.
That looks epic, my sort of summer meal. Currently doing pork belly chunks marinated in chinese flavourings, then put them with sugar on top as per burnt ends .. it is the ultimate fusion. The chef stole one. Good job my wife is not watching this, she would be pestering you for a Vegas wedding, with nibbles ...
