Pork Floss - 肉松 - Ròu Sōng / cooking technique / long shelf life without additives

  • In most of Chinese families, there is a jar of pork floss in the cupboard. In China, this meat is called "Rou song". It is pulled pork that we pan-dry to give it a very light cottony texture.
    It can be eaten in many ways and for any meal or snacks.

    1kg pork shoulder
    2 tsp salt
    4 slices of ginger
    2 garlic cloves
    2 green onions
    1.5L water
    1 tsp Shaoxing cooking wine
    3 tbsp light soy sauce
    1 tsp dark soy sauce
    3 tbsp sugar
    1 tsp five spice powder
    ½ tsp salt

    Amazing how different cultures use the same ingredients in a such unusual way for us. I've tried that in one of my trip to Asia and it was a really incredible surprise. I loved this video.

    Thank you for sharing the recipe. This is my childhood favorite food,, my grandma used to make this for us. She is gone to be with the lord but her cooking always remains in my heart ❤️.

    I just picked up some pork floss today and was looking for good ways to eat it and I'm so glad I stumbled across this video! I'm much too tired to make it at home for now but once I have more energy I want to try. It looks so delicious and fluffy!!
    The one i bought from the store looks delicious too but its not as fluffy and it's probably much nicer homemade.

      So many ways!
      -wrapped with spring roll skin then deep-fry. Cut spring roll skin into smaller squares to make mini spring rolls and eat as snacks. Use egg as glue.
      -pork floss bread
      -eat with steamed glutinous rice
      -sprinkle on fried rice
      -with spread mayonnaise on bread

    Thankyou for a very nice recipe/ video I wanted to ask you how many grams of the finished product is there from the kilo of Pork Shoulder?

      Less than half. I used 640g chicken and the floss weighed 300g.

    They sell a type of beef jerky here in the states that has a very similar texture. They sell in in little plastic tins.
