I agree 100% with Tim! This is an amazing overview. In my home kitchen, I only have SS, cast iron, and enamelled cast iron. For the field, I have a SS cook set, carbon steel skillet, and a cast iron camp oven. To clean stainless steel, I really like Barkeeper's Friend. It does a great job.

For anyone looking for a pan cover to protect your bag, I'd recommend using a grocery store paper bag. It weighs next to nothing, is disposable, doesn't matter if it gets wet, soiled, ruined, and if nothing else you can use for tinder.

Just got the Pathfinder carbon skillet today. I also have the Pathfinder stainless steel pan. I used my carbon skillet this morning and was impressed. I have used my stainless steel skillet several times and it has served me well. Lookin forward to more of the cooking series and hopefully some more of the canteen cooking series as well. But I’m looking for a hobo/cowboy skillet around 24 inches in carbon steel. As I’ve said, I have seen some years ago; finding now is hard. Great collection you have there Blackie. i use my mom's old strong work horse of a sewing machine and order fabric by the yard cheap. 500D Cordura nylon is a durable fabric with high abrasion resistance and is perfect for outdoor usage. i will sew a custom-made pouch for them skillets

Blackie what kind of surplus boots was it you said you liked for winter time? I'll call Kaufmans and get some size 15s and some wooly socks.I got a mountain bag from them and it's really nice I think it's the one you showed in the video it's got the little feather sticking out of it lol.
As for soot, I heard that if you coat the underside of the skillet with soap it'll prevent soot buildup. The problem I see is no two soaps are made the same off the shelf. Then there's soaps that the pioneers and Indians made. Plus I'm not sure it's viable.

I loved the result I had cooking a steak and stir-fry vegetables in my Australian army surplus Dixie set on a spirit stove. I used sesame oil...yummy.

i use the marine core desert rat boots here in the south in the winter.. i do a have a non surplus insulated boots but only wear then in extremes
