Jelly’s only way of attacking from the head was actually reused in the DLC with the horse thing.

Pachi Pachi or as I would call it, Squidward bot would actually be a pretty good miniboss for the king dice fight. Its difficulty is balanced and it deally jjst feels like one!
I thought Pachi Pachi was a secret boss that is actually in the game.
It was in the game when it released, but it was deleted after some time.
In fact that's the only boss in the video, together with card and the light, that includes actual gameplay of the game.

Beetrice wasn't made into a secret boss, the Radish was, he was unused for a while after the game's release and then was added
Bat has his own code for a boss fight.
He had 3 phases but he cant be loaded in, or maybe he can be, but we’ll need to force in his codes.

Fun fact: studio MDHR reused the flying gentleman and the mechanic from the light in the moonshine mobs boss fight in the DLC, a spider character who has an appearance very similar to the flying gentleman makes an appearance in the level, and when the female bug turns on the gramophone, the mechanic from the light level is used.
Fun Fact: Betty Beet is based off of Betty Boop.
So if you didn't notice the light is actually kind of a beta version of the light bug in moonshine mob when the beams turn red it will damage you just like in moonshine mob
The octopus, spider AND THE LIGHT were remade and used as actual bosses. There are also some secret bosses in the real game. Just follow the clues online.
If anyone is wondering why people know how the jelly fight was its bc of one of the original cuphead trailers that showed the whole jelly fight (well not whole but you get the point)

It would be cool if they make a dlc with all the bosses and scrapped bosses obviously making all the game fights harder and longer the dlc would not cost more than to 2 to 5.99 cause making everything harder and longer should actually be something That people would be happy to pay or something like that obviously you start like easy (forced) medium and expert

look the light might have been a placeholder for the dlc in moonshine mob as he has no animations for anything jelly is replaced with horse and other kl bosses pachinko never made it as his attack is a placeholder
flying gentleman may have been replaced by hilda berg bat is ealy version of phase 2 of the last bossfight
flying gantlemen ended up in moonshine mob tho and these bosses don't even work in the dlc

The Devil’s unused phase two actually was called “SplitDevil” and there were two devils (an angel and an demon) and there were also two floating platforms. The phase has no attacks but some may be present in the code.
